I made soup for the Super Bowl…

and was planning to share it that day, but I was so mesmerized by Lady Gaga that I never published the post.  Seriously, she is amazing.

So here it is…happy, healthy and hot spicy crab soup.  Better late than never!


Making this soup really had nothing to do with the Superbowl.  I have pretty much zero interest in football, although I do look forward to the halftime show.  And the commercials.

Happy, healthy and hot crab soup uses simple ingredients that you might already have on hand.  It is gluten free, grain free, dairy free, primal and paleo.  If you are following a Whole30 or are extremely low carb you could always leave the corn out.  If you want to get really technical, our bodies treat corn more like a grain than a veggie.  But I definitely think the sweetness is a nice contrast with the spice of the Old Bay.

A nice accompaniment would be a salad topped with avocado.  If you are trying to make it a little more filling maybe serve a baked organic russet potato  on the side.  The recipe makes a ton…I had two bowls of soup and honestly didn’t have room for anything else!

Soup has been shown to be helpful with weight loss. Since it takes longer to eat, there is time for your brain to actually register that you are full.  And when that soup is loaded with healthy ingredients that are nourishing your body, that’s even better!

About the ingredients:

Onions, like other members of the allium family, contain large amounts of phytonutrients like flavonoids and polyphenols.  They are also a great source of sulphur which is essential for healthy skin, hair and nails.

Celery is a great source of vitamin K and antioxidants.  In fact, scientists have discovered at least ten antioxidants in celery.  I don’t really like to eat raw celery by itself.  When I buy some for a recipe like this, I put the rest of it in my green drinks so it doesn’t go to waste.

Olive oil adds great flavor and provides monounsaturated fat.  Remember, you don’t need to be afraid of fat…it keeps you satiated and helps your body absorb the nutrients in your food.  Fat is what makes up most of our brains and cell membranes…so eat high quality fat!

I use fresh produce most of the time, but for something like this canned tomatoes make the most sense.  And that’s totally cool.  Canned tomatoes still contain vitamin C and lycopene, along with other antioxidants.  Make sure yours do not have added sugar.  Organic canned tomatoes are getting easier and easier to find.

I love making my own slow cooked chicken broth when I roast a pastured chicken.  But since I haven’t done that in awhile I bought pre-made broth at Wegmans.  Please be careful buying broth.  Many of the popular brands are loaded with additives.

I bought Pacifica brand organic bone broth.  The ingredients were very clean.  Bonus points if you have your own homemade broth in the freezer.  Broth from the bones of pastured chickens is a great source of minerals and collagen, making it an awesome skin food.  And the vitamin C from the tomatoes helps your body produce more collagen!

I’m not big on corn, but it really adds a nice flavor to this dish.  Corn is one veggie that I insist on buying organic, otherwise it is very likely to be genetically modified.

Crabmeat is always a treat.  It is high in protein, vitamin B12 and copper, and the sweet flavor is a nice chance of pace.  Copper is a nutrient that can be hard to come by, and it’s awesome for your skin.  I used a one pound can of lump crabmeat from the seafood counter at the grocery store.

So here’s the recipe…

one yellow onion, finely diced

two celery stalks, finely diced

one tablespoon olive oil

two 28 ounce cans diced tomatoes  

one quart chicken broth

one tablespoon Old Bay seafood seasoning (or more to taste)

pink Himalayan salt

freshly cracked pepper

one 15.25 ounce can corn

one pound crabmeat 

Heat the olive oil over medium heat in a large stockpot or Dutch oven.  Add the diced onion and celery and cook, stirring occasionally, until they soften…about five minutes.  I added some salt and pepper while they were cooking.  Add the tomatoes, broth and Old Bay and bring to a simmer.  Cover and cook about half an hour to let the flavors blend.  Add the corn and crabmeat, stir to combine, and serve.

This makes a huge pot of soup!  I threw in extra Old Bay…all depends on how spicy you like things.

So can this spicy crab soup help you feel happy, healthy and hot?  Hell yeah!

You will be happy eating such a tasty soup, especially on a cold day.  This soup is loaded with healthy ingredients.  Soup can help you lose weight, and this particular soup contains ingredients like broth, tomatoes and olive oil that support healthy skin.  With that firm, glowing skin and gorgeous body, you will definitely be hot!

  1. Thanks Katie! When I was asking at the farmer’s market, some of them actually told me their corn was GMO. Hopefully most of the sweet corn is not. I have always heard popcorn is not. But scary how much of the GMO corn is fed to animals.
