My chocolate chip cashew butter cookies have a secret ingredient to give you prettier skin, hair and nails. And they’re so delicious they’ll put a big smile on your face.
Cashew butter forms the base of the dough. It’s full of healthy fats and protein, so these cookies are more like a meal. I always look for nut butters without any added sugar. Cashew butter has a natural sweetness that really works here.
Eggs help bind everything together and also contribute quality protein and healthy fats. I always use pastured eggs, which are higher in omega 3 fatty acids for gorgeous, glowing skin.
Coconut flour also helps bind everything together. A little bit goes a long way! I completely avoid grains since they were one of the biggest culprits with my cystic acne. I don’t make baked goods often, but when I do the coconut flour really comes in handy!
Coconut palm sugar is used as a sweetener. It’s lower on the glycemic index than regular sugar. It also has a unique flavor (almost like caramel) that works well in these cookies. It’s still sugar though…don’t go crazy!
Chocolate chips are essential here of course. I use Enjoy Life brand, since the ingredients are super clean. Most chocolate chips contain some form of dairy, these do not. I usually get the “mega chunks.”

happy, healthy and hot chocolate chip cashew butter cookies
one cup cashew butter
two eggs
two tablespoons coconut flour
one half cup coconut palm sugar
five scoops Further Food Collagen Peptides
one half teaspoon baking soda
one half cup chocolate chips
Seriously this is too easy!
Dump everything in a bowl and stir until thoroughly combined. Batter will seem very soft. Chill in the fridge for at least an hour. The dough will firm up from the cold and the coconut flour will start to absorb the moisture.
When you’re ready to bake, preheat oven to 350 degrees. Take dough out of fridge and roll into balls. Place evenly across cookie sheet and use your hand to flatten them. I made 12 large cookies.
Bake for ten minutes, let cool, and enjoy! If you make 12 cookies, each one contains a little over three grams of collagen.
