I’ve really outdone myself this time!
If you like coconut and dark chocolate (think Mounds bar or coconut Easter egg) this is the cookie for you!
And like everything I make, this cookie doesn’t just taste good. It’s super low in sugar and carbs and contains healthy fat and collagen peptides for gorgeous glowing skin.
It’s a total win-win.
Here’s what I used:
Coconut is the main ingredient…it is basically taking the place of the flour in a traditional cookie. I used shredded unsweetened coconut. Coconut is high in medium chain fatty acids, which have many health benefits and can actually give you energy.
Collagen peptides are pretty much my health and beauty superhero, so I throw them in to everything I possibly can. They can firm up your skin, strengthen hair and nails, help you lose weight, and even reduce cellulite and wrinkles. Monkfruit extract is the sweetener here. Monkfruit has been cultivated as a sweetener for over 1000 years in China. The product I used (Lakanto Monkfruit Sweetener) is a blend of non GMO erythritol and monkfruit extract that works well for baking. It’s non caloric sweetener that can be used in the same amount as sugar. And Thrive Market carries it!
Butter adds to the rich flavor of these cookies. I always use grassfed butter which is higher in omega 3 fatty acids and fat soluble vitamins. And tastes amazing! My favorite brand is Kerrygold.
Eggs bind it all together. Pastured eggs taste better and are better for you. The yolks are a great dietary source of vitamin D. And the chickens are happier. I’m so fortunate to be able to buy eggs from local farmers, but Vital Farms is a great brand of pastured eggs that’s available in better grocery stores.
Chocolate just makes everything better. And when you are using super dark chocolate you’re getting a decent dose of antioxidants. I used the Lindt 90% cocoa bar, and loved the contrast of the bitter chocolate with the sweet coconut. The entire bar has only 8 grams of sugar, and the recipe makes twelve cookies, so the chocolate adds less than a gram up sugar to each cookie.
happy, healthy and hot chocolate dipped coconut cookies
2 1/2 cups shredded unsweetened coconut (I used Bob’s Red Mill brand)
4 scoops collagen peptides (I used Further Food brand…you can always save 10% with my code HAPPYHEALTHYANDHOT)
1/4 cup + 2 tablespoons granulated monkfruit sweetener (I used Lakanto brand from Thrive Market)
4 scoops collagen peptides (I used Further Food brand use my code HAPPYHEALTHYANDHOT for 10% off))
1/4 cup butter, melted (I used Kerrygold brand)
2 eggs, lightly beaten
one 3.5 ounce bar of Lindt 90% cocoa dark chocolate
Preheat oven to 350 degrees. Cover a large baking sheet with parchment paper.
Combine coconut, monkfruit sweetener and collagen peptides in medium bowl. Stir in melted butter and then eggs until dry ingredients are thoroughly moistened.
Use your hands to shape the dough into balls…this is a messy job. I made twelve balls that I spaced evenly on the baking sheet, then flattened with my hand.
Bake for ten minutes and let cool completely.
When cookies are cool, melt dark chocolate over very low heat (I don’t bother with a double boiler.) Carefully dip each cookie halfway into the chocolate and place on parchment to cool. I used a fresh piece of parchment since there were some crumbs on the original.
If you have chocolate left over, you could double dip the cookies. In the interest of keeping things real, I will tell you that I ate the leftover melted chocolate with a spoon. (I think I really needed those antioxidants and magn esium!)
When you have finished dipping the cookies, put them in the fridge to harden the chocolate. After that they are fine to store at room temp. They will not be around long!
