now that the weather has really turned.
Not only is it warm, spicy and delicious, it’s loaded with protein and healthy fats so it’s awesome for your skin, hair, nails and body. Win-win.
And I have a confession…I’m bored with pumpkin spice. I like the concept of it, but then it’s just everywhere. For such a long time.
So it’s time to move on to gingerbread.
And I only needed three ingredients:
Gingerbread spice mix is typically a combo of cinnamon, ginger, allspice, nutmeg and cloves. Sometimes you can find it already packaged like that. I blended my own, which took like two seconds. I posted the proportions I used below. Spices are loaded with antioxidants. Cinnamon is known to regulate blood sugar, while ginger can help with digestion. Use organic spices whenever you can…my cinnamon and ginger are always organic since I use a lot of those two.
Vanilla Coconut Collagen Fuel from Primal Kitchen is what gives this latte the creamy consistency, as well as being a great source of healthy fat from the coconut and protein from the collagen. Adding collagen to my daily diet has totally transformed my skin. It’s firmer now, at the age of 51, than it was ten years ago. Collagen Fuel is designed to make delicious shakes, but I just keep finding more fun uses for it!
Coffee is actually a decent source of antioxidants, and used properly can improve physical performance and mental focus. So many people are adding crappy artificially flavored creamers to their coffee…that’s what is making it really bad for you.
The gingerbread spice mix makes quite a bit, but that’s totally cool. You’ll be making tons of these. And I’m sure I’ll find other uses for it (which I’ll pass on to you!)
So here you go…first the gingerbread spice mix, then the latte. Enjoy!
gingerbread spice mix:
two tablespoons ground cinnamon
two tablespoons powdered ginger
two tablespoons ground allspice
one tablespoon ground nutmeg
one tablespoon ground cloves
Combine in a small bowl, store in glass jar
happy, healthy and hot gingerbread latte
one cup freshly brewed coffee
one or two scoops vanilla coconut collagen fuel
one quarter teaspoon gingerbread spice mix
Carefully add all ingredients to blender. Blend on high. Pour into cute mug and enjoy!
