Deviled eggs with smoked salmon and capers…

are pretty much the best thing ever.

They’re a great mix of high quality protein and healthy fat and they taste amazing.  Serve them with some raw veggies for antioxidants and you have the perfect little snack.  I love having them ready to go in the fridge for those times when you just need a little something.

Here’s what I use to make these delectable little treats:

Hardboiled eggs are obviously the main ingredient here.  And I take the lazy girl’s way out and buy the ones that are already cooked and peeled.  It is getting easier and to find pastured hardboiled eggs in better grocery stores.  Eggs contain high quality protein and fat, along with sooo many vitamins.  Pastured eggs are even higher in fat soluble vitamins and omega 3 fatty acids.

Smoked salmon is another great source of quality fat, protein and omega 3’s.  The smoky taste is great with the mayo and capers.  I look for smoked salmon made from wild Alaskan salmon and with as few ingredients as possible.

Capers add a briny flavor that I just love.  When I need them for a recipe I always end up buying a new jar (the jars are so adorable) and then end up with a ridiculous amount of capers in the fridge.  Don’t think there’s any real nutritional value there…it’s all about the taste.

Primal Kitchen Avocado Oil Mayo is my go-to for all mayonnaise needs.  Not only does it taste amazing, it’s made from avocado oil instead of crappy industrial seed oils like most mayos are.  Even the ones that say they’re made from olive oil usually have other crappy oils.  Read your labels.  Or play it safe and use Primal Kitchen.

Ok, this is so easy you don’t even need a recipe.  But here you go:

ten peeled hardboiled eggs

three tablespoons Primal Kitchen Foods avocado oil mayo

two ounces smoked salmon, torn into little pieces

capers for garnish

Cut the eggs in half lengthwise and use a spoon to carefully scoop out the yolks into a small bowl.  Add the mayo and mash with a fork until well combined.  Add the smoked salmon and mash some more, then scoop into the empty yolks.  Garnish with capers.

Can these smoked salmon and caper deviled eggs help you feel happy, healthy and hot?  Damn straight they can!
