IMG_2279Welcome to my blog!  I’m Elizabeth. a  holistic health coach who wants to help women look and feel amazing.  I believe beauty starts from the inside out, and I love showing friends how to develop healthy habits so we can all have more energy, better skin, and just feel great.

Here’s a healthy habit that has really helped me with that afternoon slump.  It’s very common to feel your energy lagging in the afternoon.  Most of us don’t get enough sleep and are over committed.  It’s easy to reach for sugar or a major caffeine hit (or both!) to get through this.  Unfortunately, this can lead to a sugar crash or sleeplessness at night.  I enjoy coffee, but have discovered a treat to get me through the afternoon with less caffeine: a matcha latte.  It is loaded with antioxidants and healthy fats, and tastes delicious.

Matcha is a finely powdered green tea that is higher in antioxidants because you are consuming the entire tea leaf rather than steeping it.  Like all green teas, it is lower in caffeine than coffee.  Matcha is also high in L-theanine, an amino acid that promotes sustained energy and calm alertness.  I think that is something we can all use!

Many people think of coconut milk as being high in fat, which it is, but I have found consuming more healthy fats actually helps me with sugar cravings, and keeps me satiated.  The creaminess of the coconut milk is delicious with the matcha.

I also add a tablespoon of powdered collagen.  Blended into the drink it has no taste and contains specific amino acids that are beneficial for our hair, skin and nails.  It can also help with joint pain.  I will write another post just on collagen…I couldn’t live without it!

I use vanilla stevia to taste to sweeten my matcha.  I also add a tiny amount of spirulina, a powdered blue green algae that is said to support the immune system and reduce inflammation.  By no means is it necessary, but when I have some I throw it in.

All of these ingredients can be found in my amazon store, which can be found by clicking on the header “Things I love.”  You can find many of them at a better grocery store or health food store as well.

So here’s the “recipe.”  I say that loosely., since I am not one to measure. Usually I just throw things together and keep my fingers crossed!  But I forced myself to measure the ingredients in order to share the recipe.  Feel free to improvise, make adjustments, and let me know what you think in the comments below.

Matcha Latte

1/4 cup canned coconut milk (I shake the can first)

1 cup hot water 

1 teaspoon matcha tea

1/4 teaspoon spirulina

1 tablespoon powdered collagen

Liquid vanilla stevia to taste (or other sweetener of choice)

Put the coconut milk in blender (I use a vitamix, but whatever you have is fine).  Add the matcha, spirulina and sweetener.  Slowly pour in hot water. Blend on high until frothy.  Turn down to low, add collagen, enjoy!  (And thanks to my friend Ann who pointed out that I left water out of the original recipe!!!)

    I loved this! I made it today, without the collagen because I don’t have any, but with all the raving you do about it, I’m considering trying collagen. I love that you add spirulina to it, it was so yummy! Thank you!

    So glad you liked it Tara! It’s a great way to sneak some spirulina in. Yes, I love collagen. I can truly notice a difference in my skin and nails since I started taking it.
