is pretty much the best lunch ever.
It covers all the bases…it’s made from high quality protein, healthy fat and antioxidant rich veggies. It is paleo, primal, low carb, and even Whole30 approved if you use bacon without sugar. It looks pretty and tastes even better. I’m hooked.
Here’s what I used:
Eggs are the main ingredient here, and are pretty much a staple for me. I find eggs in any form make a satisfying meal that not just tastes great, but really keeps me going.
Whole eggs (the yolk is the best part) are a source of protein, healthy fat and fat soluble vitamins. Pastured eggs are always best, but I have been known to buy the pre-cooked hard boiled eggs to save time. No one is judging…do the best you can!
I used one of the tomatoes on the vine that are available year round in grocery stores. In late summer, a locally grown tomato would taste even better. Tomatoes are a great source of antioxidants and vitamin C, which is crucial for skin health.
When I became a vegetarian around the age of 11 or 12, the only thing I really missed was bacon. After decades without it, I’m glad it’s back in my life!
Some people who follow a paleo or primal eating plan eat tons of bacon. I enjoy it, but don’t go crazy. In this case, I used a pre-cooked, nitrate free bacon. This is great to have on hand when you want to add a little flavor but don’t want a big mess. (Because really, when do you ever want a big mess?)
My favorite avocado oil mayo from Primal Kitchen Foods held everything together. This not only tastes amazing, it has the cleanest ingredient list you can find. Avocado oil is loaded with healthy monounsaturated fats, and helps your body absorb nutrients from the produce you are consuming.
Lettuce is part of a traditional BLT and also adds some antioxidants. Use what you have on hand. For a little more kick you could substitute arugula or baby kale.
You can totally eyeball this and throw it together. But if you want an actual recipe, here’s how I made one serving:
happy, healthy and hot BLT egg salad
Two peeled hard boiled eggs (pastured is best)
One medium tomato, diced
Two strips of cooked bacon, chopped
One tablespoon Primal Kitchen Avocado Oil Mayo
Several large lettuce leaves or spring mix for serving
Soooo easy…just use an egg slicer to chop your eggs into a small bowl. Or use two knives if you like your egg salad a little chunkier. Add everything except the lettuce, stir to combine. Taste for salt…I added a tiny bit of pink Himalayan.
Serve on a bed of lettuce leaves or spring mix. Enjoy!
