This recipe is perfect for the Fourth of July weekend, or any summer get together. So quick and easy, loaded with nutrients, and it tastes amazing. Win-win-win!
Here’s all you need:
Cabbage is loaded with antioxidant phytonutrients, including some that have been shown to have unique cancer protective compounds. In this recipe I used a bag of slaw mix to keep things super simple.
Red bell pepper is a great source of vitamin C and adds a sweet crunch to the slaw.
Cilantro adds a distinctive fresh flavor that blends perfectly with the cumin and lime. Cilantro has powerful detox properties, including eliminating heavy metals like lead and mercury from our bodies.
Avocado oil mayo (my favorite brand is Primal Kitchen) binds everything together. Most mayos on store shelves are made with crappy oils like soybean oil…avoid these!
Fresh lime juice adds zesty flavor and some vitamin C.
Mineral rich salt, pepper and cumin are all you need to season this yummy summer slaw.
simple southwest slaw
one bag slaw mix
one red bell pepper, diced
one handful (or more) of cilantro, roughly chopped
one quarter cup avocado oil mayo
juice of one or two limes
mineral rich salt, freshly cracked pepper and cumin to taste

This is so simple…Combine the slaw mix, bell pepper and cilantro in a large bowl. Whisk the rest of the ingredients together and pour over slaw. Stir until completely mixed. Tastes best if it sits in the fridge for at least an hour so the flavors can combine.
