yummy ginger salad dressing…just like the Japanese restaurant!

This salad dressing is my latest obsession. It tastes just like the stuff they serve at Japanese restaurants, but without all the crappy industrial oils and sugar.

It tastes amazing on just about anything. A favorite recent combo was spring mix and avocado topped with salmon for a hearty and delicious lunch.

You could also cut back on the water just a bit to make it thicker and use it as a dip for raw veggies like cucumber and red bell pepper.

Here’s everything you need to make it. You may already have most of the ingredients on hand, although probably not the miso. Once you have it, it keeps in the fridge a long time. Although I think I’ll go through mine pretty quick making this dressing!

Carrots make up the base of the dressing, and are a great source of fiber as well as antioxidants that are amazing for your skin.

Fresh ginger is a potent antioxidant and gives this dressing its signature flavor.

The flavors of rice vinegar, toasted sesame oil and white miso all complement the ginger.

Olive oil helps to pull it all together, and I added a small amount of granulated monkfruit sweetener. My version is not as sweet as the restaurant version…you can always adjust to your taste.

Making it couldn’t be easier…you literally dump everything in the blender.

four organic carrots, cut into chunks

knob of fresh ginger, cut into chunks (about one quarter cup…no need to peel)

one quarter cup rice vinegar

one quarter cup toasted sesame oil

two tablespoons olive oil

two tablespoons granulated monk fruit sweetener (could also use coconut sugar or even raw honey)

two tablespoons white miso paste

one half cup water

Just dump everything in a high powered blender (I love my Vitamix, but hear really good things about the NutriBullet as well) and blend till combined. You might need to stop the blender and tamp everything down several times.

This keeps well in the fridge for several days (probably much longer…I’ve just always finished pretty quickly!)
