Keto-Friendly Cranberry Sauce
This is so simple and tastes good with so many things…not just holiday dinners. I make it all winter long. The bright color and tart tangy flavor brighten up any meal.
I used to rack my brain looking for side dishes that tasted delicious but didn’t make me feel like crap after! The side dish that used to be thrown away has become my favorite one! This warm side dish is the best to beat those winter blues and liven up your meal!
Here’s all you need for my keto-friendly cranberry sauce:
Fresh cranberries are easy to find around Thanksgiving and Christmas. I tend to stock up, as they keep well in the fridge and you can even freeze them. Cranberries are high in fiber and vitamin C, as well as bioactive plant compounds like quercetin, a powerful antioxidant. I cannot say enough good things about these! They are a staple in my household!
Granulated monk fruit sweetener (I like Lakanto brand) is used to sweeten this and still keep the carbs low. This is so easy to use because it tastes and measures just like sugar. I like to keep it simple!
happy healthy and hot keto cranberry sauce:
- one bag of fresh or frozen cranberries
- one cup of water
- one-half cup to one cup of monk fruit sweetener (depending on your preferred level of sweetness)
Directions:
- Rinse the cranberries in a colander and pick out any that are mushy or bruised.
- Pour into a saucepan and add the water and monk fruit sweetener.
- Cover the saucepan and bring to a boil.
- When the sauce is boiling, remove the lid and turn down to a simmer.
- Cook for ten minutes, stirring from time to time.
- Let cool and enjoy!
This stores well in the fridge for several days.
