Grain-Free Low Carb Pumpkin Spice Bars
These pumpkin spice bars are too good to be true! They are grain free, sugar free and low carb with super clean ingredients. Also moist and delicious, with just the right amount of spice.
And to make life even better, they’re super easy to make and have minimal cleanup. You’re welcome!
The ingredients are super simple…here’s all you need:
Butter makes these pumpkin spice bars moist and delicious. I use pastured butter whenever possible. It tastes better and is higher in vitamins A and D.
Eggs bind everything together as well as providing protein and a rich array of nutrients.
Granulated monk fruit sweetener tastes like sugar without all the carbs and blood sugar swings. My brand of choice is always Lakanto.
Canned pumpkin adds that yummy fall flavor. Pumpkin is high in carotenoids and makes these bars even more moist and delicious.
Almond flour subs perfectly for white flour in a dense recipe like this. (It doesn’t work as well for something light and fluffy like a cake.)
Grain-free low carb pumpkin spice bars are the best recipe for the season!
happy healthy and hot pumpkin spice bars:
- One stick butter
- One cup granulated monk fruit sweetener (I like Lakanto brand)
- Two eggs, lightly beaten
- One quarter cup canned pumpkin
- One cup almond flour
- Quarter teaspoon of baking powder
- one teaspoon vanilla extract
- one and one half teaspoons pumpkin spice blend
Directions:
- Preheat oven to 350 degrees.
- Grease an 8 x 8 inch baking pan.
- Melt the butter over low to medium heat.
- Remove from heat and stir in the monk fruit sweetener, canned pumpkin and eggs, then add remaining ingredients and combine thoroughly.
- Pour batter into greased pan and bake for 25-30 minutes. The entire kitchen will smell amazing. Let cool (if you can stand the wait) and cut into 9 squares.
