I threw together some peanut butter cookies with chocolate drizzle for my mom’s birthday lunch over the weekend, and they turned out so well that I just had to share.
They’re grain free, sugar free, and totally yummy. Also low carb and keto friendly. Total win-win!
They’re also higher in protein than your typical cookie, so they actually make a decent little snack.
The protein comes not just from the peanut butter, but from the added collagen peptides, which also support firmer skin and stronger nails and hair.
So these cookies are definitely a win win!
I won’t make you wait any longer…here’s the recipe:
happy healthy and hot peanut butter cookies
one cup natural peanut butter
one egg
one half cup granulated monk fruit sweetener (can substitute coconut sugar but they will be higher in carbs)
two tablespoons coconut flour
four scoops collagen peptides
three squares super dark chocolate for drizzle (optional…I used Lindt 90%…adds a trace amount of sugar)
In a medium sized bowl, stir egg into peanut butter until completely mixed, then add the rest of the ingredients (except the optional chocolate) and stir to combine.
Chill dough for an hour. Preheat oven to 350 degrees.
Roll dough into 12 balls and place on a parchment lined baking sheet. Gently flatten with your hand. Bake for ten minutes. They will seem very soft. Let them cool completely before moving.
Melt some super dark chocolate (I used three squares of a Lindt 90% bar) and drizzle over cooled cookies.
They are perfect with a cup of mushroom coffee or Crio Bru.
Crio Bru is my latest hot beverage obsession…it’s ground cacao that brews just like coffee. The taste is rich and chocolatey, but not sweet. It is caffeine free but contains theobromine, a gentle stimulant that also is said to improve mood. Cacao is also loaded with antioxidants.
Crio Bru is perfect when you want a little treat or pick me up in the afternoon but don’t want to be up all night. And the rich chocolate taste is perfect with the cookies.
So there you have it…a little afternoon treat that’s a treat for your skin and body too! Hope your day is amazing!
