Keto cookie dough bites…

taste absolutely sinful.

But they are loaded with healthy fat and collagen protein to keep your energy stable, firm your skin and strengthen hair and nails.
And they’re sooooo easy to make…here’s what I used:

Cashew butter is my favorite nut butter.  Even without added sugar it has a naturally sweet taste.  It contains a nice balance of protein and fat, and also provides copper, an important nutrient for skin health.
Unsalted grass fed butter adds a creamy texture and is a nice source of bio-available vitamin A, also helpful for skin.  Grass fed butter is higher in fat soluble vitamins than conventional butter.  It is also higher in conjugated linoleic acid (usually referred to as CLA) which is a great immune booster.  For flavor, you can’t beat Kerrygold butter.  It’s also easy to find in most grocery stores.
Vanilla Coconut Collagen Fuel from Primal Kitchen Foods is a staple in my pantry.  It’s designed to be used as a protein shake but I throw it into all sorts of things, like these cute little cookie dough bites.  The ingredients are super clean, it contains collagen protein for firmer skin and healthier hair and nails.  It’s sweetened with monkfruit extract so there’s no sugar.
Coconut flour was used to give these cookie dough bites a little more body.  It is much higher in protein and lower in carbs than other flours.  Coconut flour is great to have on hand for some low carb, grain free baking, but make sure you use recipes that are specifically designed for coconut flour or they won’t work!
These are ridiculously easy (like pretty much everything I make.)

one half cup cashew butter
one half cup unsalted butter, softened
four scoops Vanilla Coconut Collagen Fuel
one quarter cup coconut flour
Put all ingredients in a small bowl and combine with a spoon until smooth.  Put in freezer to firm up for at least an hour, then use a melon baller to form balls.  Makes about 25.  Store in the freezer…they will stay soft enough to eat.
