I’ve pulled together some of my favorite avocado posts.

Because nothing says Cinco de Mayo like avocados. Well, except margaritas. Could have done a margarita post!
I’ve been into avocados for decades…long before they were hip and trendy and people were creating memes about them.
My mom was pretty obsessed with them back in the 70’s (and still is to this day.) I even got avocados in my Easter basket one year. You can’t make this stuff up.
And avocados are a good thing to be obsessed with…
because they are pretty amazing for you.
Avocados are a great source of monounsaturated fat, vitamin K and potassium. They also contain a decent amount of fiber. And they taste great.
I also love cooking with avocado oil, which has all the same benefits (well, except the fiber) and is stable at high temps than most healthy oils. Avocado oil is amazing for roasting veggies. My fave brand is Primal Kitchen.
So here are those avocado posts I promised.

You’ll never guess what I made… with half of an avocado and a can of black beans. Brownies. For real. And they’re really good. This is a gluten free brownie recipe that is rich and chocolatey and loaded with quality ingredients. And no one ever guesses the secret ingredients.
This meal brightened up my day… and my skin. It’s a simple salad that is loaded with foods your skin loves…including avocado and avocado oil. Might have to make it again this week!
