buy some pre-washed organic baby spinach.
It has such a mild taste so it’s super versatile.
Spinach is a nutritional powerhouse. It’s loaded with important minerals, including manganese, magnesium, iron and copper. Copper is so important for your skin. It’s also rich in vitamins A and K as well as many B vitamins. And it’s a great source of fiber.
When you buy the pre-washed kind, it’s always ready to go. Organic is the way to go when buying leafy greens. And I personally prefer the baby spinach because it’s nice and tender for salads.
So here are some of my favorite ways to use it:
Smoothies are a great place to throw in a mild tasting veggie. A handful of spinach will change the color, but barely affects the taste. Start with a small handful and gradually incorporate more. I personally don’t drink many fruit smoothies, but love blending fresh greens with lemon in my Vitamix first thing in the am. One of my favorite combos is spinach, lemon and fresh ginger.
You can also throw some spinach in a protein shake. My personal fave is Vanilla Coconut Collagen Fuel from Primal Kitchen Foods, for taste and super clean ingredients. Throwing a handful of spinach in makes it look like a shamrock shake, but you barely taste it.
Another favorite way to use spinach (and veggies in general) is to scramble it into some eggs. There are a few ways to do this, depending on how thoroughly you like your spinach cooked. You can sauté the spinach first, and then just scramble the eggs in the same pan, pouring them on top of the cooked spinach. I usually just tear up the raw spinach leaves a bit and stir them in while the eggs are cooking so the spinach is more on the raw side.
Baby spinach makes a great base for a salad. You can really throw anything on it you like. One fun combo is hard cooked egg slices and bacon crumbles, topped with the Honey Mustard Vinaigrette from Primal Kitchen Foods. Love their avocado oil based dressings. If you like a sweeter salad, top your baby spinach with sliced strawberries, slivered almonds and drizzle with some balsamic vinaigrette.
And of course, you can always cook spinach and serve as a side dish. I like to sauté it in a little grass fed butter or avocado oil. It shrinks as it releases water, so you’ll need more spinach than you think.
And if you want to jazz it up, one of my favorite ways it to add diced tomatoes, oregano, olives and a squeeze of lemon juice. Soooo good! You could throw on some protein like chicken or fish and totally call it a meal.
It’s always best to get a variety of greens, since they all have slightly different nutritional profiles. But spinach is a great place to start!
