tastes just as amazing as it sounds.
And it was one of those meals where I literally threw everything on a baking sheet, dumped a magical sauce on top, and threw it in the oven.
Boom. Dinner is served. And as a bonus, the ingredients support gorgeous, glowing skin and a hot body.
Here’s what I used:
Wild caught Alaskan sockeye salmon is my go-to for most fish dishes. Salmon is so amazing for you…loaded with quality protein, essential fatty acids and antioxidants like astaxanthin which can help your skin look younger. So you can totally see why I’m on the salmon bandwagon.

Brussels sprouts are one of my favorite veggies. Never really fell in love until I started roasting them. Now I can’t get enough. Brussels sprouts are also loaded with antioxidants and fiber.
Red bell peppers are a staple in my kitchen. Love them raw or roasted. They are a great source of vitamin C and other antioxidants. Bell peppers tend to be highly sprayed and organic is best when you can find it. In the interest of keeping things real, the ones I used for this recipe were not organic.
Honey Mustard Vinaigrette from Primal Kitchen Foods is the base of the glaze. I added a little extra dijon mustard and then another splash of avocado oil…but you can just use the Honey Mustard Vinaigrette on its own if you prefer
So here’s what I did…this is tooo easy!
happy, healthy and hot mustard glazed salmon and veggies
one pound sockeye salmon filets
a pound and a half of brussels sprouts, washed, trimmed and halved (quarter them if really big)
one red bell pepper sliced into strips
one half cup Primal Kitchen Foods Honey Mustard Vinaigrette
two tablespoons Primal Kitchen Foods Avocado Oil
one tablespoon grainy dijon Mustard
Preheat oven to 400 degrees.
Lay the salmon in the middle of a large baking sheet lined with parchment. Surround with the veggies.
In a small bowl, whisk the vinaigrette, oil and mustard. Drizzle over the salmon and veggies.
Bake for 30 minutes until salmon is cooked through and veggies pierce easily with a fork. I gave mine a stir after about ten minutes to make sure veggies were evenly coated with the glaze. Cooking time may vary depending on your oven.
