I’m all about bowls…here’s a post I wrote awhile back:

But egg roll in a bowl is new to me.
I can’t take credit for the idea. I heard about it from Sara at The Bettered Blondie. I’ve been following her on Instagram recently…she’s adorable and love her easy healthy recipes.
So here’s what goes in this delicious bowl…
Turkey is a great source of protein. The original recipe calls for ground pork, but it can be hard to find clean pork products at most grocery stores. I was able to grab some organic ground turkey more easily. You could totally do ground pork or chicken too.
Cabbage, like all cruciferous veggies, is loaded with antioxidants and fiber. Eating plenty of green veggies is crucial for healthy glowing skin.
Avocado oil adds healthy fat which keeps you satiated and is so important for glowing skin. I love cooking with avocado oil because it withstands heat well and adds nice flavor. Stay away from overly processed industrial oils like canola and soybean. My favorite avocado oil is from Primal Kitchen.
Fresh ginger is awesome for your skin and immune system. I use it everywhere I can!
Cilantro is loaded with antioxidants and has been proven to be very helpful with detox of heavy metals from your body. It also tastes great! If you don’t like it (it seems most people either love it or hate it) just leave it out.
Lime juice adds vitamin C and livens up the flavor when you squeeze it on after cooking. Vitamin C brightens the skin and supports production of new collagen, so I use fresh lemon or lime juice daily.
The dish is also seasoned with fish sauce, rice vinegar, coconut aminos and sesame oil to give that great Asian flavor. So while it looks like a lot of ingredients, this comes together super quick.

eggroll in a bowl
one pound ground turkey
one 14 ounce bag coleslaw
two tablespoons avocado oil
one inch chunk of fresh ginger, peeled and grated or minced
one teaspoon rice vinegar
two teaspoons fish sauce
two tablespoons coconut aminos (sub tamari or soy sauce)
one tablespoon sesame oil
roughly chopped fresh cilantro and lime wedges for garnish
Heat a LARGE skillet on medium. (Something with higher sides, like a dutch oven, would be great too.
Add the avocado oil and ginger, stirring until fragrant, then add the turkey and cook, stirring from time to time, until turkey is cooked through. Feel free to season with a little Himalayan salt if you like, but go light…the seasonings you are adding later have some salt in them.
Add the rice vinegar to pan and then the cabbage. You might need to add it a little bit at a time so pan doesn’t overflow. It cooks down pretty quickly.
Add the fish sauce, coconut aminos and sesame oil, and continue to cook and stir until cabbage is thoroughly cooked. This will just take a few minutes.
Serve in bowls…makes 3-4 servings depending on how hungry you are. Garnish with cilantro and lime…be sure to squeeze on that lime juice..it really enhances the flavor. You can totally add extra sesame oil too!
Oh, and this tastes even better warmed up the next day. I love leftovers!
