See, I had a bottle of Primal Kitchen Avocado Oil Caesar dressing on hand.
With the unseasonably warm weather we had been having, a salmon Caesar salad sounded like a great idea.
But by the time I got around to buying the salmon, it was suddenly 55 degrees and rainy. In 24 hours, I went from wearing a tank top and cut offs to pleather and boots. And driving around with the top down blasting Liam Payne to blasting the heated seats. (Still listening to Liam Payne…no reason to mess with that.)
And I wanted a hot meal. Here’s what I used:
Alaskan sockeye salmon is one of my happy, healthy and hot go-to’s. So versatile, tastes great, and it’s amazing for you. Not only is it a good source of protein, wild salmon contains B12, selenium, vitamin D and is loaded with omega 3 fatty acids.

Broccoli, like all cruciferous veggies, is a powerhouse of antioxidants. It is a good source of fiber, vitamin C, and many trace minerals. It also tastes great, is super versatile and readily available. What’s not to like?
Primal Kitchen Foods Caesar Dressing, like all of the Primal Kitchen dressings, is pretty much a dream come true for someone who wants to eat clean but save some time in the kitchen. It’s made from avocado oil (see below), cage free eggs, nutritional yeast and ACV. It’s dairy-free, sugar-free, gluten-free and Whole30 approved. Pretty much covers all the bases!
Primal Kitchen Foods Avocado Oil is a staple in my happy, healthy and hot kitchen because it’s rich in antioxidants and valuable monounsaturated fats, and stable when used for cooking. It also adds a buttery flavor.
Like everything I make, this is very forgiving. Measurements are approximate…I like to dirty as few spoons as possible! Here’s what I did:
happy, healthy and hot Caesar salmon with broccoli
two six ounce filets Alaskan sockeye salmon
one pound fresh broccoli florets
two tablespoons Primal Kitchen Foods Avocado Oil
one half cup Primal Kitchen Foods Caesar Dressing
Preheat oven to 400 degrees. Drizzle the avocado oil on a baking sheet. Lay the salmon filets in the middle, skin side down. Surround with the broccoli florets.
I used pre-cut and washed florets and cut a few of the really big ones up so they would cook more evenly.
Put about two tablespoons of the dressing on each filet and spread with a spoon. Drizzle the rest over the broccoli. With a spoon, gently stir the broccoli so it is coated in the avocado oil and dressing.
Pop in the oven for 15-20 minutes. Depends on the thickness of your filets. Broccoli will be browned on edges and tender-crisp. Salmon should flake with a fork.
Makes two generous servings. Enjoy!
