after a day at the pool. Because there’s no reason you can’t have a fun day and still have time to make a happy, healthy and hot meal.
This was so easy…I just dumped a bunch of stuff in a bowl, seasoned it, spread it onto a big baking pan, and popped it in the oven.
The only time consuming part was cutting the veggies, but I find it kind of relaxing. Just put on some good music and go to town. I’m totally into “Feels” by Calvin Harris, Pharrell, Katy Perry and Big Sean. And “Get Low” by Liam Payne and Zedd. I love how the boys from 1D sound a little naughty now that they’ve gone solo.
Here’s what I used:
Red and yellow bell peppers are a great source of vitamin C and vitamin A (in the form of carotenoids), both of which are essential for skin health.
Zucchini and yellow squash supply a wide array of vitamins, as well as minerals like copper and magnesium.
Garlic is a source of many minerals and sulphur compounds, and has been recognized for its potential to reduce the risk of certain forms of cancer.
Chicken thighs are a great source of protein. I used bone-in thighs that had the skin on. Meat cooked on the bone just tastes better, and I love to eat the crispy skin of pastured chicken. There is no reason to fear saturated fat. Numerous studies have proven that it is not the villain that we thought it was.
Avocado oil is one of my favorite oils to cook with. It is stable in higher temps, and adds a rich buttery taste, along with antioxidants and healthy fats for shiny hair and beautiful skin. I love the avocado oil from Primal Kitchen Foods.
I also seasoned with some freshly cracked black pepper and smoked salt, which is my new BFF in the kitchen.

one pound bone in, skin on chicken thighs
one each: red bell pepper, orange bell pepper, zuchinni, yellow squash
two cloves garlic
two tablespoons avocado oil
smoked salt and freshly ground pepper to taste
Preheat oven to 400 degrees. While oven is heating, dice the garlic and slice the veggies (I cut mine into long strips as pictured.) Put them all in a large bowl, add the chicken thighs and drizzle with the avocado oil. Then season to taste with the smoked salt and freshly cracked pepper. I just used my (clean) hands to combine everything thoroughly, then dumped onto a large baking sheet. Spread everything out so it’s in a single layer and place in the oven.
Cooking time can vary. Chicken is done when it reaches an internal temp of 165 degrees. I just check by sticking a fork in it to see if the juices are clear.
I like to let the skin of the chicken get pretty crispy, so mine took about 45 minutes. I would recommend checking at 30 minutes.
