You can make this any day. But Sundays are my favorite day to cook, because I typically have more free time than usual.
Salmon is one of my happy, healthy and hot staples…high quality protein, healthy fat, and it tastes great!
Some people are super organized and cook food for the entire week on a Sunday, then store it neatly in the fridge in beautiful glass containers. I am not one of those people, but I do like to cook a little extra when I have time, so I have healthy stuff ready to go. Seriously, just cooking two proteins (maybe one in the crockpot) and roasting a big pan of veggies on a Sunday can make the next few days a lot easier.
At home, I only cook wild Alaskan salmon. But I don’t stress when I eat out…life’s too short for that. Here’s an old post on Alaskan salmon:

I’m usually happy with my salmon prepared very simply, but every now and then I want to liven things up a bit. So I made a dijon topping with only two ingredients…and loved it so much that I had to share it.
I mixed my beloved Primal Kitchen Avocado Oil Mayo (this is the only brand I buy any more) with dijon mustard, and spread it over the salmon before roasting. Sprinkled with a little pink Himalayan salt. Seriously, that’s it! I served it with baked organic sweet potatoes and broccoli. Doesn’t get much easier than that.
The mayo is loaded with healthy fats from the avocado oil. Avocado oil is not just full of healthy omega fats, it contains polyhydroxylated fatty alcohols (don’t worry… there won’t be a quiz on this!) that have been shown to reduce skin damage from UV rays.
Yes, I know this mayo costs way more than the crappy ones at the grocery store made with industrial soybean oil. But they are doing nothing for you.
Sweet potatoes are one of my favorite carbs. They are loaded with beta carotene and have a decent amount of vitamin C, as well as numerous minerals. Consuming them with fat helps absorb the nutrients. I think sweet potatoes taste best just baked and topped with butter.
Broccoli, like all cruciferous veggies, contains tons of vitamin K, vitamin C and too many minerals to mention. The sulphur compounds in broccoli support gorgeous skin. (They are also what makes broccoli kind of stinky when you cook it.) I love to roast broccoli, but this time I just steamed it.
And here’s how I made the salmon:
happy, healthy and hot dijon salmon
One pound frozen Alaskan sockeye salmon filets, thawed
One tablespoon Primal Kitchen Avocado Oil Mayo
Small amount of oil to grease pan…I used olive oil
One tablespoon dijon mustard
Pink Himalayan salt
Preheat oven to 375 degrees. Lightly grease a baking pan and lay out salmon filets skin side down. (I usually thaw them in a colander to get rid of excess water.) Combine the mayo and mustard in a small bowl and spread over the salmon fillets. Sprinkle with a little salt and pop in the oven. Mine were done in about 15 minutes.
