Daniel and Lindsey were determined to make grain-free and gluten free foods that taste amazing, and if these cookies are any indication, they have succeeded.
If you have followed happy, healthy and hot for awhile, you know that giving up grains and most dairy is what finally cleared my skin of cystic acne after trying everything else imaginable. I thought that giving up grains meant giving up baked goods, but with this flour that’s not the case.
Guiltless Superfood Seed Flour is made from the seeds of golden flax, sunflower, chia, sesame, hemp, pumpkin and poppy. So not only is it gluten and grain free, it’s loaded with healthy fats, protein and fiber.

So about the cookies….
I used the recipe for Chocolate Chip Peppermint Cookies that is posted on the Guiltless Superfoods website. (I first spotted the cookies on Instagram and couldn’t get them out of my head!)
I wasn’t feeling the peppermint, so I followed the recipe as given, but left out the peppermint extract and crushed peppermint candy. Which pretty much turned these back into regular chocolate chip cookies.
A few notes about the ingredients…
I’ve already told you about the Guiltless Superfood Seed Flour. That’s what makes these cookies high in protein and fiber. Due to the high fiber content of the seeds, one ounce of the flour has only 1 gram of net carbs. So if you are counting carbs (I don’t really count anything, but definitely stay away from starchy carbs) these are very low.
The recipe calls for coconut oil. I used Nutiva, which is organic and always tastes great. Amazon has a great deal on a two pack, or you can do what I do and order it from Thrive Market. I get a giant 54 ounce tub of it about once a month.
These cookies are sweetened with coconut palm sugar. This sugar is less glycemic than regular white sugar. It also has a slightly caramel flavor. Kind of like brown sugar. Which is great in chocolate chip cookies. Remember, this is still sugar. Don’t go and eat ten cookies because I told you they were healthy.
For the chocolate chips, I used Enjoy Life brand chocolate chunks. These are free of dairy, soy and nuts, and taste pretty amazing. And I love to find a big chunk of chocolate in my cookie! You can find these on Amazon, but more and more grocery stores are carrying them.
The cookies were super easy…you make them in one bowl. The dough has to be chilled for at least an hour, but could sit in the fridge up to 48 hours before baking.
The recipe made 20 cookies for me, but that’s because I couldn’t stop testing the dough. So it probably would have been 24 decent sized cookies. The recipe said 27.
These are filling cookies. As amazing as they are, you can eat one or two and be satisfied. In fact, I had one (ok, two!) for breakfast this morning with my coffee. (Collagen and coconut oil blended into my coffee, of course!)
I made a second batch of cookies where I used butter instead of the coconut oil. Every bit as delicious.
There are so many other things you can do with this amazing flour…I will definitely be trying more of the recipes on their website, and probably creating some of my own. You could also use the flour for breading things like chicken or fish.
If you are lucky enough to live in the Austin area, you could buy Guiltless Superfoods tortillas, bread and cookies in local stores. These products can also be shipped, but since there are no preservatives and everything is shipped frozen the shipping costs are pretty high.
For now, I’m going to be busy baking and experimenting with this amazing Superfood Seed Flour.

Sometimes I need a reminder not to eat 10…they are really good! I also just made cinnamon muffins with the flour today…they turned out great. If you can find the flour in the UK (doubt this exact one is available yet) I am thinking the recipe would work with almond flour. You could mix in some flax meal and/or ground chia.

I have made muffins etc. with almond flour/flaxseed. I am quite intrigued by the coconut palm sugar, I have seen that and a syrup version. I’m going to attempt to make a healthy version of a Christmas Danish spice cake with ground almonds, cinnamon and ginger and orange today.
