It’s that time of year- pumpkin spice everything! So I’m sharing a simple recipe that has all the yummy fall vibes while also packing a powerful punch nutritionally speaking.
Not only are these bars made with nutrient dense ingredients (instead of empty white flour and sugar) they have only 5 ingredients and don’t require any baking!
Here’s all you need to make them:
Cashew butter has a naturally sweet flavor and contributes protein and healthy fat. You could really use any nut butter for this recipe, I just think cashew butter tastes the best.
Canned pumpkin puree (along with the added spice blend) contributes that classic fall flavor and is a great source of beta carotene.
Sweet vanilla protein powder from Four Sigmatic contributes most of the protein to these bars. The sweet vanilla flavor blends nicely with the pumpkin. It also acts as the “flour” in this recipe. This is my all time favorite plant based protein powder, both for flavor and amazing quality of ingredients.
Pumpkin pie spice is what gives the spicy fall vibe– don’t be shy with the measurements!
Mineral rich salt adds the finishing touch and helps to pull all the flavors together. My favorite is Redmond Real Salt.

pumpkin spice protein bars (5 ingredients, no baking!)
3/4 cup cashew butter
3/4 cup pumpkin purée (not pumpkin pie filling)
5 scoops Four Sigmatic Vanilla Protein Powder (save 10% with HAPPYHEALTHYANDHOT)
1 tablespoon pumpkin pie spice
1 teaspoon salt (I used Redmond Real Salt)
Line a loaf pan with parchment paper. Combine cashew butter and pumpkin thoroughly, then add the dry ingredients. Be patient. I used my kitchen aid stand mixer.
When thoroughly combined press into the bottom of the loaf pan and chill in fridge for at least 15 minutes.
Cut into 6 bars. Will keep in fridge for about a week (but they’ll never last that long!)
