Not only is this pudding pretty, it’s delicious.
It’s also packed with protein…the protein powder I used, combined with the chia seeds, add up to a whopping 27 grams of protein, making this an amazing breakfast, lunch or hearty snack.
This recipe is easy to double or triple so you can have these in the fridge ready to go at a moments notice.
Here’s all you need:
Vanilla protein powder adds delicious creamy vanilla flavor and of course, protein. My protein powder of choice is from Four Sigmatic. It is soy free and the protein is a blend of pea, chia, hemp, pumpkin and coconut. It also contains 1500 milligrams of mushroom extracts and adaptogens
Chia seeds are what thicken this into a pudding because they absorb so much liquid. They also provide more protein, fiber and omega 3 fatty acids. I love chia because it really has no flavor so you can blend it into anything.
Organic beet powder is what gives this its vibrant pink color. It’s also a great source of antioxidants. This isn’t the first time I’ve used it…check out my pink latte.
Use your milk of choice as the liquid. I used almond milk because that’s what I had on hand. Look for one with minimal ingredients and no added sugars.
I find the protein powder adds all the sweetness I need. But if you want it a little sweeter no problem at all…add a few drops of my favorite liquid vanilla stevia.
Garnishes are totally optional but so much fun! I used raw cacao nibs, unsweetened coconut flakes and fresh blackberries for a some fun color, flavor and texture.
ok, this is ridiculously easy…here’s the recipe:
hhh pretty protein pudding
one cup milk of your choice (almond, coconut, whatever…look for one with minimal ingredients and no added sugar)
one scoop of vanilla protein powder…I really like the plant based protein from Four Sigmatic
three tablespoons white chia seeds
3/4 of a teaspoon organic beet powder
optional stevia to taste
optional garnishes…raw cacao nibs, unsweetened coconut flakes, berries
Put everything except the stevia and garnishes in the blender (I love my Vitamix) and blend on high. Taste for sweetness and add a little stevia if necessary.
Pour into a serving bowl (I used cute little glass jars) and refrigerate until firm. This takes about 15 minutes but it will stay fresh in the fridge for days if you choose to make ahead.
Garnish when ready to eat and enjoy!
