Not only is this latte pretty, it can make you prettier! And it’s creamy and delicious…perfect for a snowy day!
And like pretty much everything I make, it’s keto friendly, low carb, gluten free and dairy free. You know, all the things!
Here’s all you need to make it:
Almond milk (or whatever you have on hand…oat, coconut, it all works!) forms the base of the latte. Look for one that is unsweetened.
Organic beet powder is what gives this latte it’s magical pink color and a bit of earthy flavor. But it’s more than just a pretty color. Beets are a good source of vitamin C which is essential for skin health, and are good for circulation. Some people claim they give a nice energy boost as well…and I’m always available for more energy!
Coconut oil gives a creamy mouthfeel and the nice froth when the latte is blended. It’s also a great source of healthy fat for steady energy and glowing skin.
The vanilla collagen peptides add a subtle vanilla flavor and hint of sweetness. But if you’ve followed me for more than a minute you know they do a lot more than that…they’re amazing for your skin, nails, hair and body. If the collagen doesn’t add enough sweetness feel free to sweeten to taste with some stevia.
Ok, here you go…
happy healthy and hot pretty pink latte
one cup almond milk, warmed (or whatever milk you like)
one teaspoon organic beet powder
two teaspoons coconut oil
one scoop vanilla collagen
stevia to sweeten (optional)
This is too easy! Put everything in the blender (I love my Vitamix) and blend on high until it’s frothy. Looks extra pretty in a glass mug. Enjoy!!!
