Low Carb Grain-Free Gingerbread Cookies
As soon as the temperatures start dipping I’m in the mood to bake. And while I normally gravitate towards chocolate desserts, there’s something really special about gingerbread at this time of year.
A few years ago I came up with this gingerbread cookie recipe that captures the amazing flavor without all the sugar and carbs. Now they are a favorite every year. Enjoy! As an added bonus your house will smell AMAZING!
Cashew butter forms the base of the cookies and contributes protein and healthy fats. Cashew butter also has a naturally sweet taste that resembles cookie dough. Look for cashew butter without any added sugar.
Eggs help to bind the cookies together. I always use pastured eggs for their superior nutrition.
Coconut flour helps to soak up some of the excess moisture and adds protein. Coconut flour is very absorbent so a little bit goes a long way. I like Nutiva brand.
Granulated monk fruit sweetener measures and tastes like sugar but without the carbs and glucose response. My favorite brand is Lakanto.
Collagen peptides add valuable protein. Collagen peptides contain specific amino acids that support firmer skin (on your face and all over your body) as well as stronger nails and hair. My favorite brand is Further Food, and I use the unflavored variety for baking.
Gingerbread spice blend is what gives that distinctive gingerbread taste and smell. I used McCormick brand.
HHH Gingerbread Cookies:
- one cup cashew butter
- two eggs
- two tablespoons coconut flour
- one half cup granulated monk fruit sweetener
- one half teaspoon baking soda
- five scoops collagen peptides
- one tablespoon plus one teaspoon gingerbread spice blend
Directions:
- Put all of the ingredients in a medium bowl and stir until thoroughly combined. A stand mixer will work as well (I love my Kitchen Aid.)
- Chill dough for at least an hour to make it easier to handle, roll into twelve equal size balls and flatten on a parchment-lined baking sheet. This makes a big cookie!
- Bake at 350 degrees for ten minutes.
- Enjoy!
If you prefer to make gingerbread shapes, roll out on a surface dusted with coconut flour and use cookie cutters to cut into shapes.
