Low-Carb “Faux-Tatos”
This might be my favorite new recipe of 2020!
They look just like roasted potatoes but they taste even better! With almost no carbs!
These little “faux-tatos” are amazing with a burger, steak, chicken…you name it. They make the perfect little side dish, especially now that the weather is getting colder and we are wanting comfort foods.
What’s the secret ingredient? Radishes!
All you need to start:
Radishes are one of the few root veggies that are extremely low in carbs. When raw they have a spicy bite, but when roasted, it mellows out.
I use butter as the fat for roasting. It browns the radishes nicely and adds a rich delicious flavor.
In this recipe, salt and pepper are the only seasonings I used, but feel free to mix it up however you like!
I use mineral-rich Redmond Real Salt, it’s my favorite.
Ok, this is too easy…
Happy Healthy and Hot “Faux-tatos”
- two bunches of radishes
- two to three tablespoons of butter
- salt and pepper to taste
Directions:
- Firstly, preheat the oven to 400 degrees, then line a large baking sheet with parchment paper for easy cleanup and nice browning.
- Then, trim the radish leaves and wash the radishes. (the leaves are very peppery but good in salads.)
- Cut them in half (or quarters if they are very large) and place them in a medium bowl.
- Melt the butter in a small pan over low heat and drizzle over the radishes. Season with salt and pepper and then stir until they are coated in butter.
- Spread the radishes over the parchment and allow space between them. Then roast for about 25 minutes. They are done when they start to brown on the outside and they can be pierced by a fork
And a little goes a long way, for instance, this recipe makes three to four servings!
