Grain-Free Peanut Butter Chocolate Chip Bars
Just made these and couldn’t wait to share. These bars are EVERYTHING!
Not only are they low carb, grain free and keto friendly, they are super simple to make, taste amazing and freeze well. And who doesn’t love chocolate and peanut butter together? You really can’t go wrong!
These Grain-Free Peanut Butter Chocolate Chip Bars are also very satiating thanks the the healthy fats and protein they contain.
Paired with a cup of my favorite mushroom coffee from Four Sigmatic they make an amazing snack!
Here’s all you need:
Peanut butter forms the base of the batter. This keeps the bars super moist and contribute plenty of protein. Choose a brand free from added sugars.
Eggs add more protein and healthy fat and help hold everything together.
Granulated monk fruit sweetener measures and bakes just like sugar but without all the nasty carbs. It’s my go-to when I’m adapting some of my old recipes. I use Lakanto brand.
Coconut flour is used in this recipe, and a little bit goes a long way. Coconut flour is great because it is grain free and high in protein but it doesn’t work as a one to one substitute for other flours. My favorite brand is Nutiva.
Chocolate chips are perfect with peanut butter and it’s so great that there are some low carb options these days. Some of my favorites are from Lily’s and ChocZero.
Grain-Free Peanut Butter Chocolate Chip Bars:
- One cup peanut butter (choose one with no added sugar)
- Two eggs
- One half cup granulated monk fruit sweetener
- Two scoops collagen peptides
- One half cup low carb chocolate chips
- Quarter cup coconut flour
- One half teaspoon baking soda
Directions:
- Preheat oven to 350 degrees. Lightly grease an 8 x 8 inch pan.
- Combine all ingredients thoroughly in a medium bowl and pour into the prepared pan.
- Bake for 20 minutes. Allow to cool and cut into nine squares.
- Enjoy!
