sometimes you just need a cookie…

I’ve been posting all kinds of home workouts and positive vibes to help us make the most of this crazy time. But let’s face it…sometimes you just need a cookie.

So I’m sharing one of my all time fave recipes. 

These cookies are not just delicious and super quick to make, they are paleo, keto and low carb. They contain collagen peptides to give you better hair, skin, nails and body. And there are endless variations.

Here’s all you need:

Nut butter forms the base of these cookies and provides protein and healthy fat to keep you satiated. I love to use almond or cashew butter but anything works. Peanut butter is great too.

An egg binds it all together. Eggs are another great source of protein and healthy fat plus every micronutrient under the sun. Don’t be afraid of eggs!

Coconut flour also helps to hold everything together. A little bit goes a long way…a bag of it will last you for months.

Collagen peptides add even more protein…these cookies are practically a meal! Even better, collagen peptides support firmer skin and better hair, nails and body.

Granulated monkfruit sweetener is my sweetener of choice for low carb baking. Lakanto is the brand I use.

Super dark chocolate is drizzled on top after the cookies are baked to make them extra yummy and pretty. I generally use a Lindt 90% bar.

Ok, I know you want to make these so I’ll cut to the chase…here’s the recipe. Can’t wait to hear how much you love them!

one cup nut butter of choice

one egg

two tablespoons coconut flour

four scoops collagen peptides

one half cup granulated monk fruit sweetener

one half of a 3.5 ounce super dark chocolate bar

Put all ingredients except the chocolate in a medium bowl and stir until well combined (good arm workout!) 

For best results chill dough in the fridge for an hour…this makes it easier to work with.

Preheat oven to 350. Roll chilled dough into 12 small balls, or 6 larger ones. Place on parchment lined baking sheet and gently flatten with hands or a glass. 

Bake for 10-12 minutes. They will firm up a bit as they cool.

When cookies are thoroughly cool, melt the chocolate and drizzle on top.

Boom…done! How easy was that??!!

Soooo many variations…instead of the chocolate drizzle, use keto chocolate chips.

Want to make these vegan? Use a vegan egg substitute and leave out the collagen

Want to use cookie cutters and make fun shapes? Make sure dough is thoroughly chilled and roll out using some coconut flour to keep from sticking.
