I just discovered the cutest little waffle maker that I can’t get enough of. It’s like having a new toy to play with. And I don’t even like waffles.
I found it on Amazon Prime for $9.99 and I’ve been using it every day to make my eggs. It comes in tons of cute colors…of course I picked pink. I’m tempted to get the red one that makes heart shaped waffles for Valentine’s Day.
Here’s how I’ve been making the most delicious, fluffy omelets:
First, gather your ingredients:
eggs (I use three)
salt and pepper (I’m in love with Redmond Real Salt)
non stick cooking spray (I use Primal Kitchen Avocado Oil)
omelet fillings (whatever you want! I like chopped spinach, diced bell pepper and kalamata olives)
Prep your omelet fillings first, since the cooking process goes fast.
Plug in your little waffle iron. It heats up pretty quick. You’ll know it’s ready when the light goes out.
While it’s heating up, crack your eggs into a bowl, season with salt and pepper and beat them with a whisk or fork.
When the waffle iron is hot, spray with the cooking spray. Then pour in a scant 1/4 cup of the beaten egg, and sprinkle some of your toppings across the top.
Close the lid. The light will come back on. When it goes off, your little omelet is done. I just lift it out with a fork. Repeat until you’ve used up all the egg. Three eggs makes four omelets for me. (And I eat all four!)
These omelets are Keto, Paleo, Primal and Whole30 compliant. But most of all, they’re real food. That tastes good. Because at the end of the day, that’s what it’s all about!
