The weather is FINALLY heating up here in Central PA (it’s been a long winter!) and I’ve been craving fresh flavors like this soup.
It’s packed with ingredients that do wonders for your skin and body, takes minutes to throw together, and tastes amazing. Total win-win!
Here’s all you need:
Chicken bone broth is the base of the soup. Not only does it give a nice flavor, it is loaded with minerals and collagen for beautiful skin, nails and hair. To get the full benefits from the broth you want to make sure you’re using broth that has been simmered for hours (like 12-24 hours!) Sometimes I make it myself but that is rare these days. Avocado gives this soup a rich, creamy texture and is loaded with healthy fats for gorgeous skin and sustained energy. As a bonus, avocados are a decent source of fiber.
Cucumber adds a nice fresh flavor and is very hydrating. Cucumbers also contain potassium, vitamin C and some trace minerals. Cucumber skin is a nice source of silica which is great for skin, nails and hair but I only leave the skin on if they are organic.
Watercress adds a bright, peppery flavor and is a great source of vitamins A and C. A cup of chopped watercress contains 4 calories. Yes, 4.
A sprinkle of salt brings out the flavor of the veggies. Ok, here’s all you need to do to make two servings. This recipe is easily doubled, tripled, whatever you like!
hhh simple summer soup
one cup high quality chicken bone broth (I love Kettle & Fire)
one avocado, peeled and cut into chunks
one half cucumber, peeled and cut into chunks
one handful of watercress
mineral rich salt to taste (I love Redmond Real Salt)
Put the first four ingredients in the blender. Blend on low until it reaches the desired consistency (I like mine a little chunky.) Add salt to taste. Serve cold or at room temperature. You can chill the broth ahead of time in the fridge if you like it cold.
This is filling enough on it’s own for a light meal. You could top with leftover protein (chicken or shrimp would be great) to make it more filling.
