I’m talking about The Essential Instant Pot Keto Cookbook, written by my friend Casey Thaler.
I’ve been Keto for years, and obviously I love to cook, since I’m posting recipes all the time.
But I’m new to Instant Pot, and this book changed the game for me. Everything is explained so clearly that I was able to jump right in without a learning curve.
Here are some of the things I love about The Essential Instant Pot Keto Cookbook:
There is an Instant Pot tutorial in the beginning. So even if you’re an Instant Pot virgin like I was, you’ll be fine.
All of the recipes use ingredients that are easy to find in any grocery store. Doesn’t it make you crazy when you’re dying to cook something but can’t find half the things you need at your regular store?
There is truly something for everyone in this book. The recipes cover everything from breakfast to dessert. Some are super clean and Whole30 compatible, while others include dairy. If you are just transitioning to Keto there are amazing dessert recipes that should satisfy any craving.
The first recipe I made was for the Mac and Cheese on page 137. Not only was this the first recipe I tried, it was the very first time I used my Instant Pot, and it came out perfect! Casey substitutes cauliflower for the pasta. It was so great to throw everything together, cook for just a few minutes and have it turn out just right…cheesy, gooey and sooooo satisfying.
Note to my long time followers…you know that I rarely eat dairy since it tends to make me break out. This dish was definitely worth making an exception for. And I’m finding that as long as I stick to high quality, pastured dairy products I rarely have an issue with my skin anymore.
Next I tried the Hearty Hamburger Soup on page 74…another total winner! I added some chopped onion for additional flavor since I was not adding the optional cheese. This recipe utilizes the sauté and pressure cook features of the Instant Pot, and sold me even more on the versatility of my new purchase.
The Chocolate Chip Cheesecake on page 188 was to die for! I haven’t made a cheesecake in decades, and always remember them being challenging. This came out perfectly on the first try. I did not have the sugar free chocolate chips recommended in the book so I drizzled my cheesecake with some super dark chocolate. It was pretty amazing.
Do yourself a favor and get a 7 inch spring form pan right now…you will want to make this cheesecake right away.
