Salmon Caesar salad…

is so simple you barely need a recipe.

It’s also a great mix of quality protein, healthy fats and antioxidants.
Since I don’t do croutons, I came up with something fun to give it a little crunch!
And in case you were wondering, this recipe is Paleo, Primal and Keto friendly.
Here’s what I used:
Alaskan sockeye salmon is one of my faves for taste and nutrition.  It is high in protein and omega 3 fatty acids, as well as antioxidants like astaxanthin which is amazing for your skin.  Here’s a very old post explaining why I prefer wild salmon over farmed:

Romaine lettuce is the tried and true favorite for Caesar salad and that’s what I used here.  No need to reinvent the wheel!  To keep things easy I used the stuff that is already washed and cut.  When it comes to leafy greens, I always go organic.  Romaine is a good source of vitamins A and K, and a decent source of vitamin C.  All of these are essential for skin health.
I toasted some Prosciutto for a little crunch.  No croutons needed!  I look for prosciutto with the cleanest ingredients, just pork and salt.
Primal Kitchen Foods Caesar dressing pulls the whole thing together.  If you haven;t figured it out by now, I’m a huge fan of Primal Kitchen dressings and marinades.  They pack a ton of flavor and are made with avocado oil for superior nutrition.  Their Caesar dressing has a very traditional taste that I love.  No crappy refined vegetable oils either!

one salmon filet
three tablespoons Primal Kitchen Foods Caesar dressing
several handfuls organic romaine lettuce
one slice prosciutto
Preheat oven to 375 degrees.
Place the salmon filet and prosciutto on a parchment lined baking sheet.  Drizzle the salmon with one tablespoon of Caesar dressing.
Bake for approximately 15 minutes, until salmon is done and prosciutto is crispy.
While salmon is in the oven, toss the romaine with the remaining two tablespoons of Caesar dressing.
Arrange the lettuce on a plate, and when salmon is done place on top.  Crumble prosciutto over the salad and enjoy!
