And this particular combo is one of my favorites, because not only is it quick and delicious, it’s loaded with healthy fat, quality protein and antioxidants.
It’s also Paleo, Primal and Keto friendly.
Scrambled eggs with smoked salmon and a green veggie has been my go-to lately.
Here’s why:
Eggs are the star of the show when it comes to breakfast. Eggs contain a wide variety of essential nutrients and are a great mix of protein and healthy fat. If you can get your hands of some pastured eggs, even better. They have higher levels of omega 3 fatty acids and fat soluble vitamins A and D which are amazing for your skin. Don’t be afraid of the yolk…that’s where the nutrients are!
Smoked salmon adds a smoky richness to this meal. It also contributes more protein, healthy fat and omega 3 fatty acids. When buying smoked salmon, your best bet is always wild Alaskan salmon. And read the labels…look for ingredients you can pronounce. Lately I have been buying Echo Falls brand at my local grocery store. The ingredients are Alaskan salmon, salt and hardwood smoke.
Kerrygold butter is the best for cooking eggs! The flavor will totally spoil you for any other butter. Best of all, it’s made from the cream of pastured cattle, making it higher in those fat soluble vitamins that make your skin glow.
Spinach was my choice for green veggie this time. Asparagus pairs nicely too. Spinach is loaded with vitamin C and antioxidants. Vitamin C helps to brighten the skin and supports the production of new collagen. And who doesn’t want bright, firm skin?
Here’s what I use for one serving:
two or three eggs, preferably pastured
one tablespoon Kerrygold butter, divided
two ounces smoked salmon
several handfuls of spinach
Heat your favorite egg pan on medium. Crack your eggs into a small bowl and stir with a fork or whisk until combined. Put half of the butter in pan and add eggs, stirring frequently.
While eggs are cooking, heat a second pan on medium. Add the rest of the butter and spinach and sauté until spinach is cooked. This goes very quickly and the spinach will cook down to just about nothing.
When eggs are almost done, add the smoked salmon. I just tear it into pieces as I’m adding it to the pan. Continue to scramble the eggs until they are done the way you like them.
