is a hit all year round.
It tastes great on a cold winter day, but I’m totally enjoying it in the heat of summer.
Since it’s so easy to throw together, you have plenty of time to sit by the pool in a cute bikini reading a good book. Or whatever else you like to do in the summer.
Here’s what I used:

Onions contain many valuable phytonutrients. They are also a great source of sulphur compounds that are important for the health of your skin, hair and nails. And they add a great flavor to this soup.
Celery is a good source of vitamin K and antioxidants. I don’t really like to eat raw celery by itself. When I buy some for a recipe I use the leftovers in my blended green drinks.
I love using fresh produce, but canned diced tomatoes make this soup really easy, and still contain vitamin C and lycopene. Vitamin C is so important for healthy skin…it actually supports the production of new collagen. Organic canned tomatoes are available everywhere these days.
Chicken bone broth gives this soup a great flavor, and contributes collagen protein and minerals for gorgeous skin, It’s also great for joint health.
I happened to have some homemade bone broth in my freezer, but usually I buy it. Many of the brands you find in the grocery store contain questionable ingredients. I highly recommend Kettle & Fire brand. It’s made from the best ingredients and simmered for 24 hours to extract all the nutrients from the bones. And of course it tastes amazing. Corn adds a nice sweet flavor that is a great contrast to the spice. It is very rare that I use corn in my cooking but made an exception here. If you are doing a strict whole 30 or Keto, feel free to leave it out. Since I just used a small can of corn, the amount of carbs it adds to each serving are minimal. With corn you really want to do organic, since most other corn is GMO.
Crabmeat is the star of the show here. It’s a good source of protein, vitamin B12 and copper. Copper is a nutrient that can be hard to come by, and it’s amazing for your skin. I used lump crabmeat because I like to have big chunks of crab in my soup, but for a recipe like this you can really use anything.
Seasonings for this soup are really simple, since you don’t want to overpower the crabmeat. Just some pink Himalayan salt, freshly cracked pepper and of course Old Bay seasoning.

happy, healthy and hot spicy crab soup
two tablespoons avocado oil (I like Primal Kitchen brand)
one yellow onion, finely diced
two stalks of celery, finely diced
28 ounce can diced tomatoes
one quart chicken bone broth (I like Kettle & Fire brand)
one tablespoon Old Bay Seafood Seasoning
pink Himalayan salt
freshly cracked pepper
one 8.75 ounce can of organic corn
one pound crabmeat
Heat the avocado oil over medium heat in a large stockpot. Add the diced onion and celery and cook, stirring occasionally, until they soften. It should take about five minutes. I added a little salt and pepper while they were cooking.
Add the tomatoes, broth and Old Bay and bring to a simmer. Cover and cook on low about half an hour to let the flavors blend. Add corn and crabmeat, stir to combine, and serve.
This makes a big pot of soup! Hard to say how many servings…really depends on how hungry you are, but I would guess around eight. It reheats nicely.
