that I threw together last week.
Not only are they delicious, these cookies can make you prettier! Who doesn’t want that, right?!
It was crazy hot here in PA (high 90s and high humidity) so I tinkered with my peanut butter chocolate chip cookie recipe to make it a little more heat resistant. Since chocolate chips don’t hold up that well in high heat.
Love what I came up with and knew I needed to share it!
I left out the chocolate chips and added Hershey’s cocoa (since I live so close to Chocolate Town, USA) to make a cookie that is every bit as delicious and contains no added sugar at all!
Here’s what I used in these decadent cookies:
Peanut butter is kind of the star here. Any natural peanut butter will work…look for one without added sugar. And yes, I know that peanuts are technically a legume, which might not sit well with people who are die hard paleo. If you don’t do peanuts, that’s totally cool. Any nut butter will do. I feel just fine eating peanut butter from time to time, and it’s a nice source of quick protein.
Cocoa powder is what gives the rich chocolate flavor. I used Hershey’s brand for it’s traditional cocoa taste. This has no added sugar and is a good source of magnesium and antioxidants.
Eggs add quality protein and good fats. I always buy pastured eggs which are higher in fat soluble vitamins and omega 3 fatty acids.
Coconut flour helps to bind everything together. I love to use coconut flour in my grain free/low carb baking. It looks pricey compared to other flours, but a little bit goes a long way! You only use two tablespoons in this recipe. It’s awesome for making a crispy “breading” for things like chicken drumsticks or fish.
I used Lakanto brand monk fruit sweetener to sweeten these cookies and keep things as low carb as possible. Other options that should work measure for measure would be coconut palm sugar or just plain cane sugar.

happy, healthy and hot chocolate peanut butter cookies
one cup natural peanut butter
two eggs
one half cup monk fruit sweetener (I use Lakanto brand)
one quarter cup Hershey’s cocoa or other unsweetened cocoa powder
two tablespoons coconut flour
four scoops collagen peptides (I use Further Food brand)
one half teaspoon baking powder
Combine everything in a medium bowl, stir until thoroughly mixed.
Chill dough for at least an hour in the fridge. The coconut flour will absorb some of the moisture and the dough will be much easier to work with.
Preheat oven to 350 degrees. Roll dough into twelve balls and place on a parchment lined baking sheet. Flatten gently with your hand. Bake for ten minutes. They will be pretty soft when you take them out of the oven but will firm up as they cool.
