is one of my go-to lunches on a hot day.
It’s quick to throw together, delicious, and loaded with healthy fat, quality protein and antioxidants for gorgeous skin and a fit body.
And you can pick up just about everything on your next Target run…even better!
Eggs are the star of the show. Not only are eggs a great source of protein, they contain just about every vitamin you can think of, with the exception of vitamin C. The yolks are where all the nutrients are…don’t be afraid of them.
For this salad I took the lazy girl approach and bought hardboiled eggs that were already cooked and peeled. I’m all about shortcuts, especially in the summer.
Bacon adds delicious smoky flavor and and a bit of crunch to this salad. I usually buy nitrate free bacon, but my Target did not have any options. In this case, I bought the regular stuff and popped it in the oven at 350 until it was cooked the way I like it. I cooked the whole package at one time so I only had to clean that greasy pan once.
Lettuce is the traditional green in a BLT. When I make this salad, I use whatever I have on hand. On this particular day, it was organic baby spinach…pre washed to save time. Leafy greens provide antioxidants and minerals that are important for skin health, and it’s great to vary them.
Tomatoes are a great source of vitamin C and other antioxidants. I love when I can get juicy ripe heirloom tomatoes at the farmer’s market, but that wasn’t the case this time. I grabbed what I could find at Target and called it a day. Sometimes I use halved grape tomatoes in this salad if that’s what I have on hand.
Primal Kitchen Avocado Oil Mayo is what binds all of this together with its rich creamy goodness, and is the one thing that didn’t come from Target. I love this mayo for its amazing taste and clean ingredients. Most commercial mayos are loaded with highly processed seed oils…this one is made with avocado oil. Soooo good! I rarely measure anything, but for the sake of this post I figured out some measurements for one serving. Here you go:
happy, healthy and hot BLT egg salad
two hardboiled eggs, peeled and chopped
two strips of cooked bacon, cooled and crumbled
one medium tomato, diced
one tablespoon Primal Kitchen Foods avocado oil mayo
large handful of spinach, lettuce or other leafy green, washed.
This is too easy…combine everything but the greens in a small bowl. Serve on top of greens. Enjoy!
