very versatile.
I bought this one at Forever 21 a few years ago. With wedges, hoops and a jean jacket it’s good for a casual lunch. Booties and a pleather jacket give it a badass edge. And it can totally be dressed up with strappy sandals.
And you can do just as many things with cauliflower. Actually, more.
Which is pretty awesome.
Because cauliflower is high in fiber and vitamin C. Eating foods high in fiber keeps you satiated, which can be helpful for weight loss. Vitamin C is amazing for your skin. It can have a brightening effect and supports the production of new collagen for firm and healthy skin. Cauliflower is also high in phytonutrients that support our cardiovascular, digestive, immune and detoxification systems.
So eat your cauliflower!
One of my favorite ways to use cauliflower is as a less starchy, nutrient dense substitute for mashed potatoes. Just steam or boil cauliflower florets (fresh or frozen) until very soft. Drain the water, add whatever you like to mash your potatoes with, and mash. I have used pastured butter, olive oil and avocado oil, always with some pink Himalayan salt. I use a hand masher because I like my cauli mash a little lumpy.
Cauliflower rice is another great way to let cauliflower stand in for a starch. I know many people “rice” the cauliflower themselves in the food processor. I just buy it already riced…it’s readily available in most grocery stores. Sauté it in some olive or avocado oil until it softens. It will start to look slightly translucent.
Like most veggies, cauliflower is awesome roasted. Just cut fresh cauliflower into florets and spread on a parchment lined baking sheet. Drizzle with avocado oil and sprinkle with salt and roast at 400 degrees until it is easy to pierce with a fork and browning a bit at the edges.
Cauliflower can be pureed to make a nice base for soup. Here are two recipes I have posted in the past:

Another way to use cauliflower is to blend into a fruit smoothie. You honestly don’t taste it and you’re getting all those cruciferous veggie benefits. I use frozen cauliflower for this. Here are some ideas:
