Yep, seaweed.
I can’t take credit for this idea…I saw it on Instagram and had to try it immediately. And now I’m hooked.
I’m always talking about adding veggies to your eggs in the morning. It’s a great way to start your day with an extra boost of vitamins and minerals. It might be spinach, or leftover roasted veggies, or maybe just dicing up a bell pepper and throwing it in.
And all of those all good. But sometimes you’re totally out of veggies. Or just want something different.
Here’s what I used:
Roasted seaweed adds a unique savory flavor and it loaded with health benefits. Seaweed contains essential minerals like calcium, magnesium, potassium, iodine, copper and selenium. Zinc and selenium are both helpful in keeping your skin clear, and copper asssists in keeping it firm.
My brand of choice has always been Seasnax, for their super clean ingredients and great taste. The original flavor, which is what I’ve been using in my eggs, is just nori (the same seaweed used to wrap sushi), olive oil, and sea salt. Doesn’t get much cleaner than that! Eggs are a great source of protein and healthy fat, as well as omega 3s and vitamins A, D and E. Studies have shown that people who eat eggs for breakfast are satisfied longer, which can help with weight loss. I buy pastured eggs from local farmers. They are higher in nutrients and I love knowing that the chickens are happy.
Butter is what I use to cook scrambled eggs. Kerrygold is my favorite brand and readily available at most grocery stores. The cows are pastured, which means the butter is higher in viamin A, which is essential for the health of your skin. Pastured butter is always a richer yellow color than conventional butter. Don’t say I didn’t warn you…the taste of Kerrygold totally spoils you for regular butter.
I add a tiny pinch of pink Himalayan salt…the Seasnax are already salted, so you don’t need much. Himalayan salt contains dozens of essential trace minerals. And I love that it is pink!
I don’t need to give you a recipe for this…you know how to cook scrambled eggs! I just crumble one sheet of roasted nori into two or three eggs, after whisking and before cooking. You could also crumble a sheet of nori on top of the eggs after cooking.
Either way, the taste is delicious and it’s a great way to start your day.
