so I whipped up a fun little Easter treat.
One that’s tastes completely indulgent but is loaded with healthy fat and collagen protein for gorgeous, glowing skin.
And on the subject of bunny ears, do I really need an excuse? I didn’t think so.
So what’s the treat?
These cute little chocolate cashew butter bunnies.
I saw the bunny molds at Target (aka my second home.) And then came up with a treat that is so easy and good that there is no excuse not to make it! And you don’t need bunny molds…any silicone candy mold will do. I threw away the packaging so I don’t remember what brand this was.
There are only three ingredients: cashew butter, very dark chocolate, and Vanilla Coconut Collagen Fuel from Primal Kitchen Foods.
I love cashew butter for it’s creamy, naturally sweet taste. Cashews are a good source of plant based protein, as well as minerals like copper, zinc and magnesium. Copper and zinc are important for the health of your skin, and magnesium is critical to hundreds of processes throughout your body. You could really use any nut butter you like in this recipe…I just love the taste of the cashew butter.
Dark chocolate is a great contrast with the sweetness of the cashew butter. Not only that, really dark chocolate is an excellent source of antioxidants and contains very little sugar. Cacao (the main ingredient) helps to thicken the skin and also provide some protection again UV damage. I used a Trader Joe’s 85% bar since I had just been there over the weekend. If it seems like I’m always raving about the Vanilla Coconut Collagen Fuel from Primal Kitchen Foods, you’re absolutely right. It’s a protein shake that has super clean ingredients and tastes great. But it’s also a great way to add flavor and sweetness to a treat recipe without added sugar since it’s sweetened with monk fruit extract. So here’s what I did. And I’m already thinking of some fun variations.
happy, healthy and hot chocolate cashew bunnies
one half cup cashew or other nut butter
one 3.5 ounce dark chocolate bar (I used Lindt 90%)
four scoops of Vanilla Coconut Collagen Fuel
Break the chocolate bar into pieces and melt in a small saucepan over very low heat. If you have a double boiler, feel free to use it. I did not bother.
Watch the chocolate carefully and stir from time to time. When it it completely melted, carefully pour or spoon into the molds. I put mine on a small baking sheet. Place the chocolate filled molds in the freezer for about ten minute so the chocolate solidifies.
Combine the cashew butter and Collagen Fuel in a small bowl. You’ll be stirring for awhile…good arm workout!
Carefully spoon into the silicone molds on top of the chocolate and freeze until firm. These come out of the mold really easily. Store covered in the fridge or freezer. I imagine they would keep really well in the freezer but that would mean I would have to stop eating them.
Just so you know, my recipes do not turn out perfect the first time. I originally tried just putting the cashew butter mixture in the molds, freezing them, then dipping in melted chocolate. Which sounds great but in reality was a total mess. I looked like a chocolate covered bunny and spent a ridiculous amount of time cleaning chocolate from my counter and stove top.
So, can these cute little vanilla cashew bunnies help you feel happy, healthy and hot? Absolutely!
