is a hit every time I make it.
It’s super quick to make and totally delicious. And loaded with ingredients that are amazing for you. Total win-win!
I made some last week while listening to “Finesse” by Bruno Mars and Cardi B on repeat…crazy about that song. Also loving the new one from Camilla Cabello…”Never Be the Same.” And “Him & I” by Halsey and G-Eazy. So much good music right now!
Here’s what I used for the soup:
Chicken is what makes this soup so hearty. I used boneless, skinless thighs. Buy pastured or organic chicken whenever you can. If it’s pastured it’s out there running around and pecking at bugs like chickens are meant to. If it’s organic, at least you know it was fed non GMO food and had access to the outdoors. Chicken is a great protein source. I find thighs to have more flavor than breasts.
This is a broth based soup, and if you make it with chicken bone broth you are getting added benefits from the minerals and naturally occurring collagen. Yes, the right broth can give you firmer skin and a fit body! Making your own is awesome, but I don’t actually do that very often. For taste and quality my favorite brand of true bone broth is Kettle & Fire. They have recently lowered their prices, and they gave me a special discount for happy, healthy and hot followers….scroll down to the bottom!
Organic salsa is also part of the broth and gives this soup a nice flavor. I used mild since I went heavy on the spices. You need half of a 15 ounce jar of salsa. Canned and jarred tomatoes are still a good source of valuable antioxidants.
Avocado oil is one of my go-to’s for every day cooking, since it has a nice flavor and is a great source of beneficial fatty acids. My favorite brand is Primal Kitchen Foods. You could totally substitute olive oil or even butter if that’s what you have on hand. I choose to completely avoid traditional vegetable oils like canola, corn and soybean. They are heavily processed…many are bleached and deodorized to hide how rancid they are. I prefer to use oils that are more stable.
Yellow onion gives this soup flavor and contributes valuable sulphur compounds.
Red bell pepper is a great source of vitamin C and also totally works with the whole Southwest vibe. Vitamin C is not stored in the body so you need to consume it every day. It brightens the skin and supports the production of new collagen…in other words it makes you gorgeous!
Some optional garnishes for this soup are avocado, cilantro and fresh lime. Personally I like to use all three…totally kicks up the flavor. Avocado is another great source of healthy fat, and cilantro is a proven detoxifier. Squeezing a wedge of fresh lime on top gives you another boost of vitamin C.
Here’s what you do…
happy, healthy and hot Southwest chicken soup
two tablespoons avocado oil
one medium yellow onion, diced
one to two pounds of boneless, skinless chicken thighs
pink Himalayan salt, smoked paprika, chile powder and chipotle powder to taste. Thrive Market is a great place to pick stuff like this up.
one red bell pepper, diced
one quart chicken bone broth
half of a 15 ounce jar of salsa
optional garnish: diced avocado, cilantro, fresh lime
On medium heat, sauté the onion in the avocado oil. I use a big soup pot. Cook until it begins to soften, and add the chicken thighs. Sprinkle with the salt and spices, and cook on one side for about five minutes, then flip over and cook for another five minutes.
Add the diced bell peppers and stir for a few minutes until they begin to soften. Pour in the broth and salsa, cover and simmer until chicken shreds easily…usually takes about thirty minutes.
When chicken is done, fish it out (a slotted spoon is great for this) and shred with forks, then return to the soup pot.
This makes four to five generous servings. Garnish with avocado, cilantro and a squeeze of lime juice to take it over the top!
