sounds sophisticated but takes like two seconds to put together. And it tastes great.
In other words, it’s my kind of meal!
This meal also fits in with Paleo, Primal, Keto and Whole30 lifestyles.
This was so simple and good…here’s what I used:
Salmon, obviously. Alaskan sockeye salmon is one of my happy, healthy and hot faves, because it tastes great and is loaded with protein and healthy fat. Here’s an old blog post that explains why I always buy wild caught salmon: We were waiting for our toes to dry.. Thankfully I have better lighting for my pics these days!
Broccoli and cauliflower are also go-to ingredients for me. Like all cruciferous veggies, they are loaded with antioxidants, vitamin C and many trace minerals. Antioxidants fight free radical damage…think anti aging! And vitamin C helps your body produce more collagen for firm healthy skin. I bought a big bag that was already washed and cut up to make this even faster and easier.
Red bell pepper adds a nice boost of color and vitamin C to this dish. And I love the way it tastes roasted.
Primal Kitchen Balsamic Dressing is one of my new faves. The latest addition to the Primal Kitchen Dressing collection, I’ve been using this just as much for cooking as salads. It tastes delicious but there are no crappy refined vegetable oil like you find in most commercial dressings because it’s made with avocado oil.
Avocado oil adds a little more healthy fat to this dish, making is perfect for anyone trying to eat keto. Avocado oil contains beneficial fatty acids that are great for your skin. I have been using the avocado oil from Primal Kitchen Foods …totally love it!
one pound sockeye salmon filets
two pounds broccoli and cauliflower florets
one red bell pepper, sliced into strips
one quarter cup plus two tablespoons Primal Kitchen Balsamic Vinaigrette
one quarter cup Primal Kitchen Avocado Oil plus a little extra to grease the pan
pink Himalayan salt to taste
Preheat oven to 400 degrees. Lightly grease a large sheet pan (mine takes up the whole oven) with avocado oil, and arrange salmon fillets and veggies all over. Whisk together the balsamic vinaigrette and avocado oil and drizzle over everything. Sprinkle with salt and pop in the oven.
It helps to give the veggies a stir every five minutes or so to make sure they are all coated in the glaze.
Cook until veggies are crisp tender and salmon flakes easily. Mine took a little over twenty minutes. I like my salmon skin to crisp up a bit, so I turned oven up to 425 for the last few minutes.
And there you have it…a simple and tasty meal!
