Also “Friends” by Justin Bieber. Which I may have mentioned once or twice already. Because it’s that good. And my new white pleather jacket…it is sooooo cute! I just need the weather to cool down a bit.
So about the cabbage…it makes me a little crazy that it’s called red. Sure looks purple to me.
But it’s that bright color that makes this cruciferous veggie extra special. You see…
red cabbage contains a class of antioxidants called anthocyanins that provide cardiovascular protection, as well as being anti inflammatory.
Cabbage, both red and green, also contains sulphur compounds that may help prevent certain forms of cancer. And plenty of vitamin C and fiber for gorgeous skin.
Red cabbage tastes great cooked in avocado or olive oil, either on the stove top or roasted.
But with the warm weather we’ve been having in central PA lately, I wanted to make it into a slaw. Here’s what I used:
Of course, I started with red cabbage. And to save time, I bought it already shredded for slaw. This is pretty easy to find in most produce sections.
I’m super picky about my mayo, since most of them are made with industrial seed oils that I completely avoid. By far my favorite mayo, for taste and amazing ingredients list, is the Avocado Oil Mayo from Primal Kitchen Foods. Avocado oil is wonderful for your skin, and helps you absorb the nutrients from everything you are eating with it.
Apple cider vinegar is some pretty cool stuff. Make sure you are using the kind that is raw and unpasteurized. Bragg’s is a popular brand. Raw ACV contains beneficial enzymes and bacteria. I’ve talked about it before…here’s an entertaining post:
DNCE and ACV
Dried cranberries add a sweet/tart flavor. I use dried fruit very sparingly, since it’s such a concentrated source of sugar. A little goes a long way here!
Pecans add nutty flavor and extra crunch. Pecans contain minerals like copper and zinc which are great for your skin. They’re also a source of protein and healthy fat.
So here you go…
happy, healthy and hot fall slaw
8 ounce bag of shredded red cabbage
two tablespoons Primal Kitchen Avocado Oil Mayo
one tablespoon raw apple cider vinegar
one quarter cup dried sweetened cranberries
one half cup chopped pecans
Combine the mayo and ACV in a medium bowl with a whisk. Stir in cabbage, cranberries and pecans. If you won’t be serving it right away, add the pecans when ready to serve so they don’t get too soft. Makes four to six servings.
