But what if the delicious chocolate pudding was amazing for your skin and gave you an energy boost? And was so healthy you could eat it for breakfast?
I should add that this pudding is also paleo, primal, gluten free, grain free, and dairy free. What’s not to like?
So what’s in this chocolate pudding?
💟 Chia seeds are an awesome plant based source of omega 3s, protein and fiber. They also have a thickening effect in liquid, so you can make pudding without the traditional cornstarch.
💟 Raw cacao is loaded with antioxidants and is a good source of iron and magnesium. Studies have shown that cacao may have some skin benefits, including protection from sun damage and increasing the thickness of skin. If you don’t have raw cacao powder on hand, don’t let that stop you. Unsweetened cocoa powder works too!
💟 Collagen peptides are amazing for skin, hair, nails and connective tissue. They are easy to blend into hot or cold liquids and add no flavor, so throwing some in this pudding was a no brainer.
💟 I used coconut milk for the liquid, but you could use whatever you have on hand.
💟 Liquid vanilla stevia is perfect to sweeten this pudding. Coconut sugar would be a good alternative.
It couldn’t be any easier…dump everything in the blender, pour in a cute container, and set it in the fridge to thicken for about an hour. That’s it!
happy, healthy and hot chocolate chia pudding
makes one serving
one cup coconut or other non dairy milk
two tablespoons chia seeds
two teaspoons powdered raw cacao or cocoa powder
one scoop collagen peptides
liquid vanilla stevia to taste…I use NuNaturals brand and used about half a dropper
Dump everything in blender, liquid first. Blend on high for 20 seconds. Pour into cute serving dish and chill for at least an hour. Will keep in the fridge for a few days. Enjoy!
