I’m talking about the new Coconut Cashew bars from Primal Kitchen Foods. They are delicious…so sweet and chewy.
But there is nothing to feel naughty about. These bars contain 15 grams of protein (some of that coming from grass-fed collagen) and only 3 grams of sugar (from honey and monk fruit extract.) And you get a whopping 9 grams of fiber.
In general, I’m not that big on bars. So many of them are loaded with sugar, or the protein comes from questionable sources. And sure, in a perfect world we would never need to rely on packaged bars, because we would always have time to sit down to a meal.
But since that’s not the case (at least not in my little world) a bar like this can be a lifesaver. It can easily be kept in your purse, glove compartment, or desk drawer in case you’re starving. It is way better than anything you will find in a vending machine or most convenience stores.
Even if you’re not starving, but just craving something sweet to go with your afternoon coffee (or chai, or matcha!) this is a great choice because you won’t get a big sugar rush.
The ingredients are impressive…pumpkin seeds, cashews, grass fed collagen, prebiotic fiber from cassava root, chia seeds, coconut flakes, honey, water, coconut oil, coconut flour, natural flavors, pink Himalayan salt, monk fruit extract, tocopherols and almonds.
Pumpkin seeds contain an array of essential minerals, and are known for being especially high in zinc, which is great for your skin. And cashews have tons of copper, another skin supporting mineral.
And collagen? Well, you should know by now how awesome that is for your skin, nails and hair, thanks to the amino acids glycine and arginine.
Monk fruit extract is a fruit derived sweetener that is much sweeter than sugar. It’s something that is popping up more and more lately. Expect a post dedicated to monk fruit soon!
I still love the Dark Chocolate Almond Bars by Primal Kitchen, don’t get me wrong. But these new ones are a little sweeter and more dessert like…that’s why they seem so naughty. And the touch of pink Himalayan salt just accentuates the sweetness.
They also have the advantage of a better texture. They are a bit sticky but don’t stick to your teeth the way the chocolate almond ones do.

Had my first bar today, when it arrived with my Thrive order. So delicious! These are just enough different from the chocolate ones to be a nice change. Don’t get me wrong; I love the chocolate ones too. These bars are just sweet enough to be satisfying, but not enough to seem like a candy bar.
