one that involved driving with the top down, sitting by the pool, and listening to music. Totally love “Starving” by Hailee Steinfeld. And of course “Cold Water” by my boyfriend Justin.
I’m going to tell you what I ate.
Why should you care? Because I want to show you how easy it is to eat healthy, delicious food with minimal effort. That’s what lazy Sundays are all about.
If you’ve been following happy, healthy and hot for awhile, you pretty much know my morning routine. I started my day the usual way…with a quick glass of lemon water.
Next, I brewed some coffee in my French press, and blended it with coconut oil, stevia, and Vital Proteins Collagen Peptides in my beloved Vitamix. So easy and good and gives me firm skin and crazy strong nails.
And then, like every day, I made a green drink. I had just returned from my NYC trip, and had no fresh greens in the house, so I turned to my old standby, Collagen Beauty Greens from Vital Proteins. Double dose of collagen…I’m cool with that.
Later I got hungry and scrambled some eggs in Kerrygold butter. I threw in some leftover zucchini noodles. Added a little pink Himalayan salt and a lot of fresh ground pepper. Many times I cook extra veggies just to have leftovers to throw in my eggs or on top of a salad.
For lunch, I ordered a salad at the pool. I’m fortunate that there is a decent menu.
I devoured a green salad topped with beef tenderloin and avocado slices. Avocado helps your body absorb the nutrients from your veggies, plus it tastes great and I just skip the dressing. Oh, and some fresh fruit on the side…I definitely eat more fruit in this hot weather, and I was hungry.
Later in the day, I wanted a little something, but it was too early for dinner. So I had a big spoonful of peanut butter and a handful of chocolate chips. Nothing wrong with a little chocolate! (Read this post for more on chocolate: Like Justin Bieber and Jason Derulo.)
I threw together a really easy dinner…turkey cutlets “breaded” with seasoned coconut flour and cooked in Primal Kitchen Avocado Oil. Organic broccoli on the side. The turkey seemed a little dry, so I topped it with a dollop of Primal Kitchen Chipotle Lime Mayo. Makes everything good!
I did not take a pic of dinner. Turkey cutlets with a big blob of spicy mayo might taste delicious, but they’re not that visually appealing.
Oh, and while I cooked I munched on a whole raw carrot. Shoutout to Gwen who is eating them right along with me!

Cheap and easy
After dinner, I had a cup of organic decaf with a splash of cashew milk while I worked on a post. When I’m working on my laptop I tend to want a drink by my side.
So what are the lessons here?
Have a plan B…I used the Collagen Beauty greens since I didn’t have time to run to the store for fresh greens.
Eat lots of veggies…throw them in your eggs, have a salad, cook extra at dinner for leftovers.
Eat a raw carrot every day. Seriously. Doesn’t get any easier than that.
Have a treat. I really enjoy chocolate. The fat and protein from the peanut butter kept my little indulgence from turning into a crazed sugar frenzy.
So, is it possible to have a lazy Sunday and eat in a way that helps you feel happy, healthy and hot. Of course it is!
You will be happy eating delicious food that requires minimal effort. Having plenty of veggies along with high quality fat and protein gives you a good mix of macro and micronutrients that keep you healthy and help maintain your weight. So with your great body and gorgeous skin, hair and nails from the collagen, of course you’ll be hot!
