and loaded up on pastured eggs and meat from local farmers. Also some amazing organic kale and cherry tomatoes.
I love buying local and supporting organic farmers. But for all the times that isn’t possible, I try to do the best I can.
Like Tuesday. Dinner came from Target. And it was damn good.
I had been running like crazy for the last few days. I didn’t really feel like cooking. But I also didn’t feel like falling back on southwest style takeout again. Chipotle, Qdoba, Taco Solo and Neato Burrito, I love you all. We’ve just been seeing too much of each other. I need some space.
So here’s what I threw together:
Burgers, mushrooms, and broccoli. Cherries for dessert. Simple but delicious.
I know not every Target carries the exact same groceries, but the one I frequent has started carrying grass fed ground beef. And Kerrygold butter. So I threw those in my cart, along with fresh cherries and mushrooms and some frozen organic broccoli. And of course all my other crazy Target purchases. No pleather this time. It’s been in the 90s this week!
Grass fed beef tends to be a little less fatty, so I always grease the pan to be safe. I just used a tiny bit of the butter, which also topped the broccoli.
If you haven’t tried Kerrygold butter, you are in for a real treat. In fact, you may never go back to regular butter. It is that much better.
Kerrygold is imported from Ireland, and is made with pastured cream. There really is a difference. If you’ve read many of my posts, you know I avoid dairy because it makes me break out. I do completely fine with ghee and lately seem ok with butter too. Butter contains mostly milk fat, and very little of the proteins found in milk, which are probably what I am sensitive to.
The burger, broccoli and mushrooms were delicious and cooked in no time. And nothing is better than fresh cherries on a hot and steamy central PA day.
Grass fed beef is higher in omega 3 fatty acids than regular factory farmed beef, and lower in fat and calories. It is rich in conjugated linoleic acid, or CLA, which may reduce the risk of certain cancers. Oh, the cows are happier too…total win-win!
The cherries contain vitamin C as well as carotenoids and anthocyanins, which may also reduce cancer risk. Broccoli also has vitamin C, as well as calcium and numerous phytochemicals that help your body detoxify. Mushrooms contain B vitamins and a number of important minerals. The healthy fats from the pastured butter and beef help your body absorb all of these nutrients.
So the moral of this story is to do the best you can. It’s not that hard to put together a decent meal…no recipes or directions needed here.
Can a meal from Target help you feel happy, healthy and hot? Of course it can! Throw some pleather leggings in your cart and you’ll really be hot! But seriously, I’m always happy when I can prepare an easy meal that tastes good. The combo of various colors of produce with high quality proteins and fat is very healthy. The vitamin C supports collagen production for firm and healthy skin, and a meal like this can help you maintain a healthy weight. So you will definitely be hot!
