(because I didn’t want KO to be late for his grooming appointment!) when I spotted these salmon burgers.
I love salmon, and these were made from Alaskan Sockeye, which is always wild caught. (See my recent post We were waiting for our toes to dry for more on salmon.) Unfortunately, many times salmon burgers are loaded with crap we don’t need. One time I saw some that actually had high fructose corn syrup in them. Since when do we need to sweeten our salmon burgers??!!
I was pleasantly surprised to see that these had very clean ingredients: sockeye salmon, water, oat bran, garlic, salt and pepper. So I grabbed them to have on hand for an easy dinner.
The salmon burgers were delicious! The directions said to cook in a lightly oiled pan on medium heat for 4-5 minutes on each side, covered. I did this, and they were definitely cooked through. But I like my stuff browned a little more, so I took the lid off and gave them a few more minutes on each side. The oil I used was avocado oil. Why? Avocado oil has a rich, buttery taste, and withstands heat very well. I love it on salads too!
My sides were mashed cauliflower and some raw sugar snap peas (didn’t feel like dirtying another pan!) Mashed cauliflower is soooooo easy and good. As much as I love using fresh produce, I always keep a few bags of frozen cauliflower florets on hand. Empty the bag into a saucepan with plenty of water, bring to a boil on high, and turn down to a simmer. Oh, don’t forget to add some salt. If you use a high quality salt (I like pink Himalayan salt) you will be getting tons of other trace minerals that your body needs. Cook till very tender, drain, and mash. I mash with a potato masher and leave it a bit lumpy. If you like a smoother mash, an immersion blender is awesome for this. I added avocado oil to the mashed cauliflower (since it was already sitting on the counter), but grass fed butter or ghee would taste great too!
The whole meal was tasty and so easy. I ended up eating two of the salmon burgers….they’re not really that big. Oh, and if you want to try avocado oil, which I highly recommend, you can usually find it in the baking aisle at Target. I also have it in my Amazon store, where it is a better value…it’s a much bigger container.
Can a meal like this help you feel happy, healthy and hot? Of course it can, otherwise I wouldn’t be telling you about it! You’ll be happy eating a tasty meal that was easy to prepare. You’ll feel healthy, since the salmon is loaded with omega 3 fatty acids and high quality protein. The cauliflower, like other cruciferous vegetables, supports our bodies with natural detox, as well as being a good source of anti-oxidants and anti-inflammatory nutrients. And the avocado oil is adding more healthy fats to help your body absorb all the nutrients. The healthy fats from the salmon and avocado oil, plus the vitamin C from the cauliflower, are great for your skin. And the whole meal is surprisingly low in calories. So you’ll have glowing skin and a hot body too!
