Because not only are my cookies grain free and high in protein, they can give you better skin, nails and hair thanks to a secret ingredient.
Here’s what I used:
Cashew butter forms the base of the dough. It’s full of healthy fats and protein, so these cookies are more like a meal. Look for nut butters without any added sugar. You could use a different variety if you like, but the natural sweetness of cashew butter works well here. And peanut butter would be way too overpowering. (Plus peanuts aren’t even nuts!)
Eggs help bind everything together and add more quality protein and fat. I always use pastured eggs, which are higher in omega 3 fatty acids as well as vitamins A and D for gorgeous, glowing skin. Plus the chickens are happier!
Coconut flour also helps bind everything together while keeping these cookies gluten and grain free. A little bit goes a long way. I completely avoid grains since they were one of the biggest culprits with my cystic acne. I don’t make baked goods often, but when I do the coconut flour really comes in handy.
Coconut palm sugar is used as a sweetener. It is lower on the glycemic index than regular cane sugar. But it’s still sugar…don’t go crazy on these!
Gingerbread spices are what give the cookies their distinctive flavor. I mixed up my own blend for the gingerbread latte that I recently made, and that’s what inspired me to create these cookies. Spices in general are extremely high in antioxidants. The cinnamon helps to regulate blood sugar and the ginger aids digestion.

So here’s how I made the cookies:
happy, healthy and hot gingerbread cookies
one cup cashew butter
two eggs
two tablespoons coconut flour
one half cup coconut palm sugar
one half teaspoon baking soda
five scoops Further Food collagen peptides
one tablespoon + one teaspoon gingerbread spice mix (scroll down for directions)
Throw everything in a bowl and stir well to combine. A stand mixer is great here too, I just didn’t feel like having to clean mine.
Chill dough in fridge for at least an hour. This gives the coconut flour time to absorb the moisture and firms the dough up.
When you’re ready to bake, preheat oven to 350 degrees. Take dough out of fridge and roll into balls then gently flatten on cookie sheet. I made 12 big cookies.
Bake for 10 minutes. If you make 12 cookies, each one contains about three grams of collagen.
gingerbread spice mix
two tablespoons ground cinnamon
two tablespoons ground ginger
two tablespoons ground allspice
one tablespoon ground nutmeg
one tablespoon ground cloves
Combine and store in a small jar.
