In honor of National Watermelon Day…

I threw together this watermelon feta salad.

And yes, National Watermelon Day is a thing.  This year it falls on Friday, August 3.

But even if Watermelon Day were not a thing, I would still be loving this salad.  The contrast of salty, sweet and tart is such a fun treat. Plus it’s super easy to throw together.

Spicy crab soup…

is a hit all year round.

It tastes great on a cold winter day, but I’m totally enjoying it in the heat of summer.

Since it’s so easy to throw together, you have plenty of time to sit by the pool in a cute bikini reading a good book.  Or whatever else you like to do in the summer.

This cherry mango shake…

totally satisfied my sweet tooth.

It was a rainy, dreary Saturday and I just wanted a little something.

I happened to have some frozen fruit on hand, and I always have Vanilla Coconut Collagen Fuel in my pantry, so this was quick to throw together.

It’s also a great mix of healthy fat, quality protein and antioxidants for pretty skin and a fit body.

I’m back…

from a quick trip to Cape May, NJ.

One of my favorite places, and a town known for tons of good food.

And I’m here to tell you that you can totally enjoy yourself on a road trip, and still feel happy, healthy and hot when you travel.

Total yum to these cookies…

that I threw together last week.

choc cookies eliz

Not only are they delicious, these cookies can make you prettier!  Who doesn’t want that, right?!

It was crazy hot here in PA (high 90s and high humidity) so I tinkered with my peanut butter chocolate chip cookie recipe to make it a little more heat resistant.  Since chocolate chips don’t hold up that well in high heat.

Love what I came up with and knew I needed to share it!

I left out the chocolate chips and added Hershey’s cocoa (since I live so close to Chocolate Town, USA) to make a cookie that is every bit as delicious and contains no added sugar at all!

Here’s what I used in these decadent cookies:

Flounder with lemon butter and capers…

and an arugula salad.

This is a dinner that I threw together in minutes after taking some time to clean out my fridge and freezer.

It was totally delicious (can’t wait to make again!) and a great mix of healthy fat, quality protein and antioxidants.

And it came together in the time it took to listen to three songs!  (“Familiar by Liam Payne, “Finesse” by Bruno Mars and “Delicate” by Taylor Swift…some of my current faves.)

I’ll tell you what I used and how I threw it together.  No measurements…this is one where you can totally wing it!
